I need help finding some heallthy reciepes with brown rice, any suggestions?!


Question: 2 1/2 cups cooked brown rice
4 green onions, chopped
1 cup low-fat creamy cottage cheese
1 teaspoon coriander
1/4 cup freshly grated Parmesan cheese
1/2 cup milk, skim or low fat
1/2 teaspoon Dijon mustard
nonstick cooking spray
PREPARATION:
Combine cooked rice, chopped green onions, cottage cheese, coriander, Parmesan cheese, milk, and mustard in a mixing bowl. Stir gently until well blended. Pour into a casserole dish sprayed with nonstick cooking spray. Bake in a 350° oven for 15 to 20 minutes.
Brown rice recipe serves 4 to 6.

Might I suggest Spinach Casserole or Stuffed Tomatoes? Both are reasonably healthy; chicken broth might be a bit fattening depending on the brand you use.

Mahi Mahi and brown rice....yummy! so thaw out fish, brush with olive oil, sprinkle with s+p, and grill. Side with your fave veggie!

Use it to make a tart or quiche crust. Mix enough rice for one crust (couple o handfuls) with an egg (or just the egg white if you prefer), and you could add some herbs to it too. You could fill it with anything. Mushroom quiche, potato and herb quiche, feta and sundried tomato and olives...
