What are some great tasting "country" dishes to make???!


Question: I'm not sure what you mean by 'country', but we live in the 'country' so I'll try:

Here are some of my family's favorites:

BBQ Ribs

Country Style Ribs
Onion
Bottled BBQ Sauce (any kind you like)

Sear ribs on all sides to seal in juices. Place in crock pot. Cover with sliced onions and BBQ sauce. Cook on low 8-10 hours. Yummy!!!

Serve with baked beans, cornbread…and this salad is great:

Caesar Coleslaw

1 pkg pre-made coleslaw
1/4-1/2 cup shredded parmesean cheese
1/2 pkg caesar croutons
1 bottle creamy caesar dressing

Toss first three ingredients together. Add enough dressing to coat. It's even good the next day!

Rice and Beans and Sausage

3 celery ribs, chopped
1 onion, chopped
4 garlic cloves, minced
1 3/4 cups V8 juice (or tomato juice)
2 16 oz. cans kidney beans, drained
3/4 tsp dried oregano
3/4 tsp. dried thyme
1/2-3/4 tsp. red pepper flakes (less if you don't like spicy)
1/2 tsp pepper
2 lb. fully cooked smoked kielbasa cut into 1/4 inch slices.
4 cups cooked rice

Combine all ingredients except rice in slow cooker. Cover. Cook on low 4-6 hours. Serve over rice. Yummy!!

Creamy Crockpot Chicken

1 envelope dry onion soup mix
2 cups sour cream
1 can cream mushroom soup
Salt and pepper to taste
6 boneless, skinless chicken breasts

Combine first 4 ingredients. Pour over chicken in crockpot. Cook on low 8 hours. Serve over noodles or rice.

Pork Parisienne

6-8 boneless pork chops
Salt and pepper
Paprika
1 can cream of mushroom soup
1 small can sliced mushrooms
1 cup sour cream
? cup water

Sprinkle pork with salt, pepper, and paprika. Place in crockpot. Mix soup, water, mushrooms, and sour cream. Pour of pork chops. Sprinkle with paprika. Cover and cook low for 6-8 hours. Serve over rice or noodles.

For chicken parisienne: Substitute the pork for 6 boneless, skinless chicken breasts

Crinkly Noodle Casserole

1 pkg. egg noodles
2 cans cream of chicken soup
1 can cream of mushroom soup
1 can corned beef
16+ oz. Velveeta, cubed

Cook noodles according to package direction until al dente. Meanwhile, mix the rest of the ingredients in a saucepan. Stir until cheese melts. Add milk until the consistency is creamy. Drain noodles and pour into a large casserole dish. Pour corned beef/cheese mixture over the top and mix slightly. Bake in 350 oven for 30 minutes or until bubbly.

Chris’ Best Hamburger Casserole Ever

1? pounds hamburger
? onion chopped
3or more cloves garlic, chopped
1 can cream of mushroom soup
1 soup can milk
1 cup sour cream
1 ? cups sharp cheddar cheese, divided
1/2 tsp oregano
? tsp basil
1 tsp seasoned salt
1 8 oz cube cream cheese
1 12 oz. package egg noodles, cooked

Cook hamburger with onions and garlic until cooked through. Drain, if necessary. Add mushroom soup, milk, sour cream, 1 cup cheddar cheese, spices, and cream cheese. Stir and cook until cheese melts and mixture is bubbly. Add meat mixture to cooked noodles. Stir gently to mix. Add pepper to taste. Spread in a 13 x 9 casserole. Sprinkle with ? cup cheese, cover with foil. Bake in 350 oven 20 minutes or until bubbly. Enjoy!

Nacho Chicken

6-8 chicken breasts (or 8-10 chicken thighs)
2 cans nacho cheese soup
? cup milk
3 tbsp worchestershire sauce

Place chicken in large baking pan. Sprinkle with salt, pepper, and a spicy seasoned salt. Combine soup, milk, and worchestershire sauce in saucepan until just heated through. Cover and bake at 350 for 1 hour.

Cheesy Pepper Steak

1 ? pound sirloin steak, cut in strips
Seasoned salt
1-16oz pkg. frozen bell pepper and onion strips, thawed
1-16oz pkg. cubed Mexican processed cheese

Sprinkle steak with seasoned salt. Coat large skillet with non-stick vegetable spray and cook steak strips for 10 minutes or until no longer pink. Remove steak from skillet and set aside. Stir in vegetables and ? cup water and simmer for 5 minutes or until all liquid cooks out. Add cheese and turn heat to low. When cheese melts, stir in steak until heated through and serve over hot cooked rice.

Tangy Spareribs

5-6 pounds spareribs
1-6oz can frozen orange juice concentrate, thawed
2 tsp Worcestershire sauce
? tsp garlic powder
Spicy seasoned salt
Pepper

Place spareribs in shallow baking pan, meat side down and sprinkle with salt, pepper, and seasoned salt. Roast at 375 for 30 minutes. Turn ribs, roast another 15 minutes and drain off fat. Combine orange juice, Worcestershire and garlic powder and brush mixture on ribs. Reduce heat to 300. Cover ribs, roast 2 hours or until tender and baste occasionally.

Quick Chicken Casserole

3 cups cooked, chopped chicken or turkey
1-16oz. package frozen broccoli florets, thawed
1-10oz. can cream of chicken soup with ? cup milk
2/3 cup mayonnaise
1 cup shredded cheddar cheese
Salt and pepper
1 ? cups crushed cheese crackers

Combine chicken, broccoli, soup, mayo, and cheese, salt and pepper to taste. Mix well. Pour into buttered casserole dish and spread cheese crackers over top. Bake uncovered at 350 for 40 minutes or until bubbly.

Lemonade Chicken

6 boneless, skinless chicken breasts
1 (6oz) can frozen lemonade, thawed
1/3 cup soy sauce
1 tsp. garlic powder

Place chicken in greased 13x9 casserole dish. Combine next 3 ingredients and pour over chicken. Cover with foil. Bake at 350 for 45 minutes. Uncover, pour juices over chicken and cook another 10 minutes uncovered. Serve over hot, cooked rice.

I know THIS is a country dish and one of our favorites:

Chicken Fried Steak

1-2 pounds tenderized round steak
2 cups flour
2 Tbsp seasoned salt
2 tsp pepper
Vegetable oil

Heat a skillet with ? inch vegetable oil until hot. Mix flour, seasoned salt and pepper together. Put on a plate. Cover serving size pieces of steak with the flour mixture on both sides. Coat well. Cook each side in oil approx. 4 minutes. Remove steak from pan and keep in a warm 250 degree oven.

Gravy:
Drain all but ? cup of the oil. Make sure you keep all the crusty, wonderful bits in the pan. Add ? cup of flour all at once. Stir to mix. Continue stirring and let cook 1 minute. Add 2 cups milk or half and half (depending on how rich you want it to be) all at once. Stir, stir, stir, until it boils and gets thick.

This one is great on a cold day, or when you're in the mood for something hearty and spicy:

Southwestern Soup

2 lb. ground beef
1 medium onion chopped
1 (7oz) can chopped green chilis
2 cans black beans, undrained
2 cups frozen white or yellow and white corn kernels
1 can diced tomatoes, undrained
1 can Rotel tomatoes, undrained
2 lb. Mexican Velveeta, cubed
1 Tbsp. chili powder
1 tsp red pepper flakes

In large skillet, brown beef and onion, drain. Combine all ingredients in crockpot, cover. Simmer on low, stir occasionally until cheese is melted. Continue to simmer until heated through, 4 hours.

Fried chicken, collard greens with ham hocks, mashed potatoes, mac and cheese, sweet potato pie or pecan pie. I love all of these.

if you want country cooking you have to have pork, duh.
