Vegetarian sushi rolls?!

Question: i watched a video of a man making a vegetarian sushi roll.. he put some rice on a sheet of nori, flipped it over and put shredded carrots, sliced avacado, and sliced cucumber on it.. i wanted to make this at home and it seems pretty easy but i need to know a few things about making sushi.. like is there a certain type of rice i need to use, and can i use brown rice? is there anything else i need to learn also?

and are there a lot of calories in this?

Aww... I love vegetable sushi!!! Yes, the best rice for sushi is Japanese sushi rice; and yes, you can use brown rice as substitution (personally, I think brown rice taste even better, because it has more texture).
Don't for get to buy the sushi making tool!!!! You can find them in Asian food store. I also find plastic rap comes in handy from time to time ( if you don't want to create a mess). Especially when you are making the ones that has rice on the outside of seaweed.
Calories...hem... if I remember it correctly, 6 vegetarian sushi shouldn't be more than 100Cal, but I guess it also depends on the size of your sushi, rihgt? :)

Anyhow, hope those tips help, and cheers!

I found that round rice was not the best for making nice sushis. I go by the sushi rice in the asian supermarket. Then all you need is rice vinegar and sugar. You can get plenty of recipes for sushis on the internet. But yes, you'll need rice, rice vinegar, sugar and a makisu.
For vegetarian sushi you can also add shedded beetroot, smoked tofu, alfalfal sprouts, radishes... but you can make tomago sushi which is a slice of omelette ( japanese style) on to of a ball of rice.
There also are those tofu pockets which are deep fried then preserve in a kinda sweet broth. You can open carefully the pockets and then filled them with sushi rice.

First, please make it sure that you like soy-sauce and sea weed smell. If you don't have any problem on those. You can enjoy sushi rolls very much. Brown rice is not recommendable but acceptable. How to make sushi rolls is very popular on net. You can just choose vegetables for the ingredients whatsoever you may like'em.
to make a roll, you must prepare with bamboo-mat(maki-su). One thing important, you need to chooose good dried seaweed because poor quality makes sushi taste very bad. You better ask Japanese food grocery for good ones. Talking about calories, forget about it and enjoy. Bet you it just about one 10ths on beef steak dish. Don't forget wasabi(horse raddish mastard) if you like hot thing. Hope you get satisfaction!

you use japanese rice(that is the name) then steam it as you would a normal rice(pilaf style) youll need about 1 1/2 cup of water per cup of japanese rice. add salt and vinegar(rice wine vinegar is the best) mix it well. add anything you like to make sushis.
