I need a cake recipe thats eggless, hopefully a WHITE CHOCOLATE CAKE RECIPE, is there such thing?,,thanks?!


Question: everytime i make a plain white cake it tastes sooo boring and i once went to a party where there were these patty cakes that were made with white chocolate, they were really nice
but i cant add egg because there are a few kids allergic to egg at my sons playgroup

i hope u can help, thanks xxxxxxxxxxx ive tried searching on the net but i cant find white chocolate cakes that are eggless, i do have egg replacer in my cupboard, would that b ok to substitute the eggs in a cake recipe?, not sure if u can b allergic to that too, i use the egg replacer here cos my hubby has high cholesterol

This recipe is a vegan cake and you could add grated white chocolate of white cooking chocolate

Self-raising flour 250 ml (yes, millilitres :-) )
1 1/2 tsp baking powder (typical 1 flat + 1/2 teaspoons, not cook's teaspoons)
150ml caster sugar
Small pinch of salt

Sieve all of these into a bowl.

Then mix:

150ml soya milk
70ml oil (I use sunflower)
1/4 tsp vanilla essence (same teaspoons as before)

Add the wet ingredients to the dry ingredients. Mix, and put into a cake tin lined with greaseproof paper. Cook in an oven. I've found that this recipe, and vegan recipes in general, tend to be sensitive to the oven used. In our current oven, we put it on 180 degrees celcius, and cook for about 40 minutes. I think our oven doesn't heat up as much as the setting suggests, and people with other ovens might want to try lower temperatures, say 170 or so. In some ovens it might just fall in the middle, with the crust of the cake being hard.

My faourite cake and the best tasting cake is this chocolate cake recipe from the depression when eggs, butter and milk were scarce

easy vegan chocolate cake
Ingredients
3 cups flour (680 grams)
2 cups sugar (450 grams) (read this first)
6 tablespoons cocoa (100 grams)
2 teaspoons baking soda (10 cc's = 10 ml)
1 teaspoon salt (5 cc's = 5 ml)
3/4 cup vegetable oil (200 cc's)
2 tablespoon vinegar (30 cc's)
2 teaspoon vanilla (10 cc's)
2 cup cold water (480 cc's)
Directions
Mix the dry ingredients. Add the wet ingredients. Stir until smooth. Bake two greased, floured pans at 350 degrees for 30 minutes. Makes two layers of a two-layer 9-inch or 8-inch round cake, or one small sheet cake or you could put into patty pans . When cool, frost it.

White Chocolate Party Mix (Gluten Free)
Cook’s Notes: You could also call this “White Christmas Mix.” This is my version of Alton Brown’s White Trash (link), but it is made without cereal or pretzels. A 6-oz bag of dried cranberries yields 1.5 cups.
I brought this to my co-workers, and it received rave reviews. At least two people related tales of having to hide it from spouses. It is very easy to make and delicious.
2 bags (12-oz each) white chocolate chips
12-oz bag whole toasted almonds
2 cups whole cashews
2 cups dried cranberries (8 oz)
1 cup plain M&Ms (half of a 14-oz bag)
In a microwave-safe large bowl, heat chips on medium power for 1 minute. Stir. Add 1 tsp olive oil into the bowl and stir again. Heat the chocolate for another 30 seconds on medium; stir well until chips are completely melted and smooth. If required, continue to heat the chocolate on medium at 30-second intervals, stirring well each time.
Add mix-in ingredients to the melted chocolate. Stir to mix well with a rubber spatula, being sure to completely coat all ingredients. Spread mixture onto parchment paper to cool, separating the mixture into individual pieces or bite-size clusters (the easiest way to do this is by hand, wearing food-safe disposable gloves). When chocolate is set, store mix in an airtight container.
Makes 14 cups.
Source: This specific blend of mix-ins was inspired by a Trader Joe’s trail mix of almonds, cashews, and cranberries. Yes, you could simply add pre-made trail mix to the melted white chocolate and go from there.




Eggless Chocolate Cake
2 1/4 cups flour
1/2 cup cocoa powder
1 cup sugar
1/2 cup brown sugar
1 tsp baking soda
1/2 tsp salt
1 cup water
9 tbsp vegetable oil
1 tsp vanilla extract
1 tbsp apple cider vinegar (or white vinegar)
Preheat oven to 350F. Grease and flour a 9-inch bundt pan.
In a large bowl, sift together flour and cocoa powder. Whisk in sugar, brown sugar, baking soda and salt. Pour in water, vegetable oil, vanilla extract and vinegar, whisking thoroughly, but quickly, until the batter comes together and is quite smooth.
Pour into prepared pan.
Bake for 45-50 minutes at 350F (my oven was a little wonky, so do check with a toothpick), until a tester comes out clean and the cake springs back when gently pressed.
Allow to cool in pan for 10 minutes, then turn out onto a wire rack to cool completely. Once the cake as cooled, top with any glaze.
Satiny Chocolate Glaze
(based on this Hershey's recipe)
3/4 cup plus 2 tbsp bittersweet chocolate chips (like Ghiridelli)
3 tbsp butter
1 tbsp heavy cream
1 tsp vanilla extract
Melt chocolate chips and butter together in a medium bowl. Whisking constantly, bour in heavy crea, followed by vanilla. When glaze is smooth, pour or spread onto cake. Let cake set out for at least 2 hours to allow the glaze to set up.
Makes enough to glaze a 9 or 10 inch bund

White Vagen Cake

1-1/2 cup flour
1/3 cup cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup sugar
1/2 cup vegetable oil
1 cup cold water
2 tsp vanilla extract
2 tsp vinegar

Preheat oven to 375°F.
Spray a small baking pan (8x12) with vegetable spray or Baker's Joy.

Combine dry ingredients directly in the pan. Mix all the wet ingredients

In a small bowl, combine remaining ingredients leaving out the vinegar until the final step.

Combine wet and dry ingredients, stirring together in pan until well combined. Stir in the vinegar rapidly and immediately place pan into preheated oven and bake for 25 to 30 min.

You can stir in 1/2 cup white chocolate chips just before baking to make a richer cake with melted chocolate bits or swirls.

The egg replacer may work, ask at the playgroup if the kids can have that...Sorry can't be too much help.
