I just made these Thursday night. They were gone in 30 minutes.
Fried apple burros:
4 large apples (I use granny smith or other cooking apple)
2 T butter
1 Teaspoon cinnamon
3 T. sugar.
Oil for frying: vegetable oil, canola oil or corn oil.
1 dozen flour tortillas.
Peel slice and core the apples.
Put butter in a skillet, add apples and saute until apples reach desired tenderness (5 or so minutes).
Add 1/2 the cinnamon and 1 Tablespoons of the sugar.
Stir until sugar is dissolved.
Mix remaining sugar and cinnamon in a small dish and set it aside.
Put a small amount of cooked apple on a tortilla. Fold Tortilla.
Fry in hot oil until light brown.
Sprinkle with cinnamon sugar mix while still hot.
Serve warm or at room temperature. We don't use the whipped cream although you certainly can. These are great for picnics and pot lucks.
*Note: You'll get a dozen with medium tortillas and six if you use large tortillas.
their called empinadas.they are a mexican deep fried pie.you can use tortillas or you can use pastry dough.mostly they put bananas or carmelized apples.
Ingredients
two 6” to 7” flour tortillas
butter-flavor or regular nonstick cooking spray
1 teaspoon granulated sugar
1/8 teaspoon pumpkin pie spice
2 apples or pears, peeled, cored and sliced
1 tablespoon brown sugar
1/2 teaspoon pumpkin pie spice
one 5-1/2-ounce can apple juice
1 tablespoon dried currants
sifted powdered sugar (optional)
Preparation
Preheat oven to 400° F.
Place tortillas on a baking sheet and lightly coat tortillas with nonstick cooking spray.
In a small bowl, stir together granulated sugar and 1/8 teaspoon pumpkin pie spice. Sprinkle over tortillas. Bake for about 10 minutes or until crisp.
Cool completely on a wire rack.
Lightly coat a medium, nonstick skillet with cooking spray and preheat over medium heat. Add apples or pears, brown sugar and 1/2 teaspoon pumpkin pie spice; cook and stir about 10 minutes or until golden.
Add apple juice and currants. Continue cooking, stirring occasionally, about 20 minutes or until the apples caramelize and the liquid evaporates.
Spoon apple mixture over tortillas. If desired, sprinkle with powdered sugar.
Serve immediately.
Substitute Pumpkin pie spice with cinnamon and don't worry about the currents if you don't like them... leaving them out won't hurt the overall recipe
