I am a Catholic too.
This is probably already too late, but just for the future, there are lots of meatless dishes you can make on Fridays without having Fish and most of them shouldn't require a recipe as they are probably dishes you have made before.
1. The Old Traditional Tomato Soup and Grilled Cheese Sandwich is always good and is my favorite thing to have on a Friday Night.
2. Breakfast foods are good too.
I love having Breakfast for dinner!
Pancakes or Waffles W/Maple Syrup.
Eggs, Hash Browns & Toast.
An Omelet or Quiche with just Cheese or Veggies.
3. Meatless Pasta.
Spaghetti, Macaroni & Cheese, Lasagna (try it, it's good!), Tuna Casserole, or just make whatever Pasta Dish you like and leave out the Meat.
Some Garlic Toast would go along great with any of them.
4. Creamed Peas over Toast.
Just make a White Sauce, throw in the Peas and serve it over Toast or an English Muffin. YUM!
5. Pizza with just Cheese or add some Veggies.
You can either make it yourself or order one.
6. Soup, some Crusty Rolls & a Salad.
There are lots of soups you can make without meat.
Vegetable, Cream of Broccoli, Cream of Mushroom, Split Pea (just leave out the ham), Corn Chowder, etc.
Just use your imagination, there are lots of things to eat that are meatless and will taste good too!
Just try a Veggie burger

Easy Black Beans with Yellow Rice
1 tablespoon vegetable oil
1 teaspoon butter
1/2 cup chopped onion
1/4 cup chopped celery
1/4 cup chopped green pepper
1 can (15 ounces) black beans, drained
1 can (14.5 ounces) diced tomatoes with juice
1 teaspoon sugar
1/2 teaspoon dried leaf oregano
1/2 teaspoon dried basil
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1/8 teaspoon salt
1/8 teaspoon hot sauce
1/2 cup long grain white rice, uncooked
1/4 teaspoon ground turmeric
Heat vegetable oil and butter in a medium saucepan over medium heat. Add onion, celery and green pepper; cook, stirring constantly, until tender. Stir in drained beans, tomatoes, sugar, oregano, basil, garlic powder, pepper, salt, and hot sauce; bring to a boil. Reduce heat, and simmer, uncovered, 15 minutes or until thickened, stirring frequently; set aside. Cook rice, following package directions, with the addition of turmeric to the cooking liquid. Serve hot black bean mixture over rice. Serves 2.

Try a pasta dish...there are lots of really easy pasta dishes on foodtv.com. Rachael Ray made a baked ziti on her 30min meals program yesterday - no meat with lots of flavor. I don't have the recipe, but you can get it off the foodtv website.
