Does anyone have a good recipe for a spinach omelet?!

4 large eggs
1/4 cup whole milk
1 bunch fresh spinach
1 small yellow onion or shallot
1/4-1/2 teaspoon ground nutmeg
4 tablespoons butter
4 ounces cream cheese, at room temp
1 tablespoon fresh lemon juice
1/2 teaspoon fresh lemon zest (optional)
salt and pepper
Directions
1Wash spinach leaves well-remove stems and slice leaves very thin; set aside.
2Whip the cream cheese with lemon juice and zest if using; set aside.
3Dice onion or shallot; set aside.
4In a large skillet over medium heat melt 2 tbsp of the butter.
5Add the spinach and onion and sauté for 3-5 minutes. You want the onion slightly translucent and the spinach wilted. Remove from heat and pour into a bowl; set aside.
6Melt the remaining 1-2 tbsp butter in the same pan over medium heat.
7Whip the eggs well with the whole milk and pour into the hot pan.
8Allow eggs to cook slowly, allowing eggs to almost set completely.
9Pour 1/2 the cheese mixture over 1/2 of the omelette, add the spinach onion mixture; sprinkle on the nutmeg, salt and pepper, and the remaining cheese.
10Fold the omelette over, turn off heat and let stand for 3 minutes.
11Serve.
2 oz cream cheese
2 eggs
1/4 cup chopped fresh spinach leaves
1/4 teaspoon toasted sesame seed oil
In a bowl, mix together cream cheese and spinach. In a separate bowl, beat 2 eggs. Brush sesame seed oil on the bottom of a frying pan. Preheat pan on medium heat, pour in eggs. Cook until able to flip egg. Spread cream cheese mixture onto cooked side of egg. Wait 30 seconds to ensure the other side of the egg is cooked, fold in half, wait 1 minute to melt cream cheese mixture. Remove from heat, serve.
I just put warm, drained, cooked spinach in the omelet just before folding over and plating and then put sour cream on the top. It's simple and good.
simply sautee fresh spinach in butter and add to omelet, throw some cheese you like with it and fold over. the frozen spinach is nasty and the fresh cooks pretty fast. i also put a dollup of sour cream on top. i used to cook this at a B & B I own. fast, easy and always got rave reviews.
