Ours have been done that way for years.

Haven't seen those. To put salmonella in perspective only 1 of every 20,000 eggs might contain the bacteria. At this rate, if you’re an average consumer, you might encounter a contaminated egg once every 84 years.

I don't see it as so much of a problem that they need to heat the egg and probably charge more for the added work they incur.

You mean pasteurized eggs? Yes, since my husband has some health issues I use these for mayonnaise and the such that use raw eggs. They are a bit pricy and I can only find them in the more "upscale" grocery stores.
