How do you make creamed spinach?!
Answers: I have a recipe that calls for creamed spinach, but our commissary doesn't carry it. I have no other places to shop, so I'm going to make my own creamed spinach out of frozen chopped spinach. How do I do that?
Creamed Spinach
Start to Finish: 30 minutes
Ingredients
2 10-oz. bags spinach (large stems removed) or two 10-oz. pkg. frozen chopped spinach, thawed
1/2 cup chopped onion
2 to 3 cloves garlic, minced
2 Tbsp. butter
1 cup whipping cream
1/2 tsp. freshly ground black pepper
1/4 tsp. salt
1/4 tsp. ground nutmeg
Directions
1. In a large pot of rapidly boiling salted water cook fresh spinach (if using) for 1 minute. Drain well, squeezing out excess liquid. Pat dry with paper towels. Snip spinach with kitchen shears to coarsely chop; set aside. If using frozen spinach, drain well, squeezing out excess liquid.
2. In a large skillet cook onion and garlic in hot butter about 5 minutes. Stir in cream, pepper, salt, and nutmeg. Bring onion mixture to boiling; cook, uncovered, until cream begins to thicken. Add spinach. Simmer, uncovered, about 2 minutes or until thickened. Season to taste with additional salt and pepper. Makes 4 servings.

What You Need:
1 16oz bag chopped frozen spinach
1 1/2 tablespoons Earth Balance or soy margarine
1 tablespoon unbleached white flour
1/2 cup mushroom or vegetable stock
1 1/2 cups thinly sliced mushrooms
1/4 cup plain soymilk
1/8 teaspoon grated nutmeg
1/4 teaspoon salt
freshly ground black pepper
What You Do:
Empty the frozen spinach into a big saucepan with about 1/2 cup of water. Bring to high heat and steam until the spinach is defrosted. Drain in a collander and squeeze out as much liquid as possible. Set aside.
Wipe out the same saucepan and melt the margarine. Add the flour and whisk it for a couple of minutes until it's all bubbly and smoooth.
Slowly add in the stock, whisking all the while to make a smooth sauce.
Add in the sliced mushrooms and let them steam until tender (keep whisking every once in a while so you don't get any lumps!)
Whisk in the soymilk.
Add the spinach and stir to coat with the sauce.
Add the nutmeg and season to taste with pepper and more salt if desired.
Cook your spinach, maybe add a little sour cream, salt, pepper, nutmeg, and cheese. The best cheese for creamed spinach is Gorgonzola with mascarpone. Delicious! Not sure if you can find that in the commissary. Just melt it all together.
EASY CREAMED SPINACH CASSEROLE
2 boxes frozen chopped spinach, thawed
1 8 oz. cream cheese, room temperature
1/2 cup imitation bacon bits (or real)
1 stick butter, melted
1 cup shredded Parmesan cheese (not grated)- save 2 tbsp for topping
Mix all in greased casserole dish, sprinkle about 2 tablespoons shredded cheese on top, and bake at 350°F for 30 minutes or until bubbly.
Usually, creamed spinach is sold frozen, in little blocks. But here's a good recipe.... serve it as a side dish, then make your recipe w/ the leftovers.
Boston Market Creamed Spinach
1 (20 oz) Package Chopped Spinach Frozen
1 C. thick White Sauce (recipe below)
1/2 C. Sour Cream
1 tsp. Salt
2 Tbsp. Butter
2 Tbsp Finely Chopped Onion
1/4 C. Water
White Sauce:
3 Tbsp. Butter
4 Tbsp. Flour
1/4 tsp. Salt
1 C. Whole Milk
Parpare the white sauce using a medium low setting melt butter in a saucepan add flour and 1/4 teaspoon of salt until creamed together. Add milk a little at a time on medium heat. Constantly stir with a whisk until mixture becomes thick and smooth.
Place butter in a 2-quart saucepan on medium heat, add onions. Cook until the onions are transparent. Place spinach and add water to pan, lower the heat and place lid on pan. Stir several times until the spinach is almost completely cooked. Add 1 teaspoon of salt. When spinach is almost done add white sauce and sour cream, stir well and simmer until completely blended.
Creamed Spinach Recipe
Ingredients:
1 package of frozen spinach (12 ounces, chopped)
4 slices of bacon, chopped before frying
1 medium size onion, finely chopped
2 tablespoons of flour
1 teaspoon seasoned salt
1/8 teaspoon freshly ground pepper
1 clove of minced garlic
1 cup milk
Cook the spinach according to directions. Be sure to drain and dry well with a paper towel. Fry the bacon and onions together until the onions are soft. Add flour, salt, pepper and garlic. Mix well. Add the milk a little a time, mixing while you add it. Cook and continue stirring until thickened. Add the spinach and mix well. Not a bad recipe if you like spinach! I do! You can use fresh spinach..Just cook it till wilted, drain and chop...
This is a recipe for Lawry's Creamed Spinach! It is from the famous restaurant, Lawry's, The Prime Rib Restaurant, in Beverly Hills, California. I do not know if the restaurant is still there. A recipe from 1964.
