That sounds like a well balanced meal for a diabetic. As long as you make sure that it is a small potato, or large one cut in half it will be fine. Sweet potatoes have less carbs than white potatoes, but since you are having an orange veg with the pumpkin, I think white is fine. As for the person who said people with diabetes don't eat potatoes, they are nuts. Everything in moderation.

I think the fish and pumpkin would be alright. Potatoes have a lot of carbohydrates in them. I'm not sure if that would be the best. Maybe a salad or a green vegetable instead?

Do you mean to combine these
3 ingredients into some kind
of recipe? It doesn't sound too
appetizing.
A diabetic does not eat potatoes. They are high in starch, which changes to sugar in the body.
