Is it food-safe to keep out appetizer made with boars head hunk of turkey and cheese for hours?!

You should put it on a plate with ice cubes so that it doesn't get gross. If you don't, it won't go bad, but it will get warm, and I don't know many people that like sweaty cheese!

Takes food 75 hours to go bad... But cover be cautious..

to be on the safe side i would keep it on a plate on crushed ice. (is this for a party?)

I'd say 4 to 6 hours is good for the turkey. Remember these products have alot of salt and some have nitrates as preservatives. I've kept them out all day at times and they were fine. Naturally, the dept of agriculture wouldnt agree with me, but they really overdo it especially on their expiration dates.
I'm all about food safety and cold cuts are pretty safe to keep out.
That being said, after 40 years in the food business, I've never seen anyone get sick from cold cuts.
Cheese you can keep out till the next day and then some.

any food left out without being held below 40 degrees for a total time of more than 2 hours is bad. total time being prep time and any time above 40 degrees. so 20 minutes to prepare + 15 minutes to cook + 60 minutes to cool back down to 40 degrees = 5 minutes right? not necessarely the cooking destroys the harmful "bugs" (bacteria). so you have about 1 hour of serving time. the catch is the cooking time. if you are not cooking the dish, then you only have a few minutes to truly call the dish safe to eat without a doubt. The main reasons why i personally dont like to eat at buffet restaurants or potlucks where i cant see the food being prepared and cooked

do not keep it out more than 2 hours

If you need more time, put half out, then the other half out 2 hours later (pitchign the first half)
