What is your ultimate meal? I want to cook something special & will try anything new?!

Question: My fiance has been through a lot lately & he's SUCH a great guy. I just wanted to do something special. I'm going to clean the entire apartment tomorrow, and I wanted to maybe rent some favorite movies of his & cook a great dinner for him.

It can be anything at all from simple to complicated. I'm a pretty good cook. Just wondering what your ultimate meal is. We eat fish, shellfish, beef, vegetables, pretty much anything. He's a vacuum really so I can do anything I want.

chicken corden bleu

INGREDIENTS
3 skinless, boneless chicken breast halves
3 slices Swiss cheese
3slices ham
1 1/2 tablespoons all-purpose flour
1/2 teaspoon paprika
3 tablespoons butter
1/2 cup dry white wine
1/2 teaspoon chicken bouillon granules
1/2 tablespoon cornstarch
1/2 cup heavy whipping cream

DIRECTIONS
Pound chicken breasts if they are too thick. Place a cheese and ham slice on each breast within 1/2 inch of the edges. Fold the edges of the chicken over the filling, and secure with toothpicks. Mix the flour and paprika in a small bowl, and coat the chicken pieces.
Heat the butter in a large skillet over medium-high heat, and cook the chicken until browned on all sides. Add the wine and bouillon. Reduce heat to low, cover, and simmer for 30 minutes, until chicken is no longer pink and juices run clear.
Remove the toothpicks, and transfer the breasts to a warm platter. Blend the cornstarch with the cream in a small bowl, and whisk slowly into the skillet. Cook, stirring until thickened, and pour over the chicken. Serve warm.

Shepherd’s Pie
1 onion, diced
1 tablespoon olive oil
1 lb. lamb, minced
1 clove garlic, crushed
1 large carrot, diced
1 beef stock cube
1 lb. chopped tomatoes
1 tablespoon corn flour
3 tablespoons tomato puree
pinch of salt and pepper
2 lb. potatoes
1 stick butter
If made with beef, it would be known as cottage pie.
Firstly, heat the olive oil in a pan, add the onion, garlic and carrot and cook until soft. Add minced lamb and stock cube, then cook until the mince is brown and shows a crumbly texture. Stir in the tomatoes and tomato puree, and add the corn flour. Leave to simmer, stirring occasionally, for about fifteen minutes, or until thickened.
Meanwhile, peel and chop potatoes and boil until soft, then mash them with the butter and salt and pepper to taste.
Put the filling into a deep dish, then top with the mashed potatoes and put under a warm grill (broiler) until the top is brown and crisp.
Delicious topped with melted cheese.
