Thai cooks--any good mee krob recipes?!


Question: There are a ton of recipes on the net, but I'd like something good and authentic. I liked it when I lived in Thailand and would like to try to make them for the first time.

MEE GROB - this recipes I take it from Friend living as a hawker selling this in Thailand.
She gave me the ingredients and how it's made. The amount I figure it myself.

4 cups oil
200g rice vermicelli

Sauce
1/2 cup vinegar
1/2 cup sugar
1 tsp salt
1 tsp tomato paste
3 tbsp garlic pickle

garnish
2 eggs, beaten (optional)
1/4 cup spring onion (chopped)
1/4 cup red capsicum
1/8 cup chopped chives
4 oz fried tofu, cut into small pieces
1 tbsp chopped coriander leaves

- in deep-fryer or wok, heat the oil and fry the rice vermicelli until puffed. Remove and set aside
-Combine the sauce ingredients in a large skillet and cook for 4 minutes over medium heat, until syrupy consistency
- If desired, fry the beaten eggs in a small pan. When cooked remove carefully and slice into thin strips. Set aside
-Add the noodles to the pan and mix quickly with the sauce so that they are evenly coated. Place on a serving dish and sprinkle with the garnish . Serve immediately
