I am wanting to make some chewy granola bars...do you have a good recipe to share with me?!


Question: Chewy Granola Bars

1 1/2 cups baking mix
1 1/2 cups quick-cooking oats
1 cup firmly packed brown sugar
1/2 cup butter OR margarine, softened
1 large egg
1/3 cup semisweet chocoate chips
Preheat oven to 350°F. Combine baking mix, oats, brown sugar in a medium bowl. Cut in butter until mixture resembles coarse crumbs. Make a well in the center and add egg. Use a fork to mix egg into dry ingredients until moistened and crumbly. Stir in chocolate chips. Press evenly into a 9-inch square baking pan. Bake for 12 to 15 minutes or until center is set. Cut into bars while warm.

Delicious Chewy Granola Bars

INGREDIENTS
4 1/2 cups rolled oats
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon vanilla extract
2/3 cup butter, softened
1/2 cup honey
1/3 cup packed brown sugar
2 cups miniature semisweet chocolate chips

DIRECTIONS
Preheat oven to 325 degrees F (165 degrees C). Lightly grease one 9x13 inch pan.
In a large mixing bowl combine the oats, flour, baking soda, vanilla, butter or margarine, honey and brown sugar. Stir in the 2 cups assorted chocolate chips, raisins, nuts etc.
Lightly press mixture into the prepared pan. Bake at 325 degrees F (165 degrees C) for 18 to 22 minutes or until golden brown. Let cool for 10 minutes then cut into bars. Let bars cool completely in pan before removing or serving.

Bigfoot Granola Bars

7 c Rolled oats
1 c Coconut
1 ts Salt
1 c Wheat germ
5/8 c Brown sugar
1/4 c Sunflower seeds; (optional)
1/2 c Chopped nuts; (optional)
1/4 c Sesame seed; (optional)
1/2 c Oil
1/2 c Water
1 1/2 ts Vanilla
2 Cubes margarine
1 lb Marshmallows
1/2 c Honey
1 c Peanut butter
Chocolate or butterscotch
-chips; (optional)

Instructions:
Combine rolled oats, coconut, salt, wheat germ and brown sugar. Also can
mix optional ingredients of sunflower seeds, chopped nuts and sesame seed.
Mix and add to this mixture oil, water and vanilla; mix until smooth. Place
in ungreased pan (large roasting pan, etc., so you can stir it
periodically). Bake at 225 degrees until golden brown, approximately 2 to 3
hours. Leave oven door open a crack to let moisture out. In saucepan, heat
2 cubes margarine and 1 pound marshmallows until melted. Add honey and
peanut butter. When melted (I usually do in double boiler), pour over
granola mix and pour into 9 x 12-inch greased pan. Cool and cut into
squares. Good for hiking and camping snacks. Also add chocolate or
butterscotch chips for a different flavor.

CHEWY GRANOLA BARS

4 c. uncooked oatmeal
1 1/2 c. chopped walnuts
1 c. brown sugar
3/4 c. butter, softened
1/2 c. honey
1 tsp. vanilla
1 tsp. salt

Combine all ingredients and press into well greased 9 x 13 inch pan. Bake 10-15 minutes at 375 degrees until brown and bubbly. Do not overbake.

OR

CHEWY GRANOLA BARS (RHODA BARS)

1 c. brown sugar
1/2 c. light corn syrup
2/3 c. peanut butter
1/2 c. butter
2 tsp. vanilla
3 c. quick rolled oats
1/2 c. sunflower seeds
1/2 c. raisins
1/3 c. wheat germ
2 tbsp. sesame seeds
1 c. chocolate chips
1/2 c. coconut

Mix first 5 ingredients well. Add remaining ingredients until completely mixed. Press into 13 x 9 inch pan. Bake at 425 degrees for 15-20 minutes. Cool before cutting.

OR

CHEWY GRANOLA BARS

1/2 bag chocolate chips
1/2 bag butterscotch chips
2 c. mini marshmallows
1/3 c. honey
1 c. uncooked oats
1/2 c. chopped dates (optional)
1/2 c. raisins
1/2 c. coconut
1/2 c. wheat germ
3/4 c. Grape Nuts

Melt all chips together in a double boiler or microwave. Blend in marshmallows and honey. The mixture will be sticky at first but will melt into liquid.
In a separate bowl combine the remaining ingredients. Add the chocolate mixture and mix well.

Pour into a 9x13 pan coated with vegetable oil cooking spray and pat down. Cool in refrigerator. When partially cool, cut into bars. Serve at room temperature for maximum chewiness.
