Small cake recipe?!


Question: does anyone have a recipe or website with a recipe for a small cake.

i want to make it in a 9 inch pan, because i always make bigger cakes, but then nobody eats them.

so i wanted to make a small and simple cake.

also, any favorite icing recipes would be nice!

Small Layer Cake Recipe

Ingredients:

1/3 cup butter
1 cup granulated sugar
1-1/2 cups sifted flour
2 teaspoons Baking Powder
1/2 cup milk
2 eggs, beaten

Cream butter and sugar, add beaten eggs, beat together till light. Sift the flour and baking powder together and add to the creamed ingredients, adding milk
as you go along mixing. Mix till smooth. Put in two small buttered and floured layer cake pans and bake in moderate oven for 15 minutes

icing

140g/5oz butter, softened
280g/10oz icing sugar
1-2 tbsp milk
a few drops food colouring



Method
1. Beat the butter in a large bowl until soft. Add half the icing sugar and beat until smooth.
2. Then add the remaining icing sugar with one tablespoon of the milk.
3. Beat until creamy then add the food colouring and mix well.
4. Add extra icing sugar to thicken or a little extra milk to make more runny if necessary

Here's my grandmother's APPLE CAKE
1/2 c. sugar
1 egg, slightly beaten
1 Tb. baking powder
1 TB. butter, softened
1/2 c. sour cream
1 c. flour
3-4 apples, peeled & sliced
Beat first 6 ingredients well. Pour into greased square pan. Top with sliced apples. Dot with wome more butter, and sprinkle with cinnamon & sugar. Bake at 350 for 30-50 min, or until it tests done.

And try this pie: The good thing is that you keep it frozen and just cut off what you want, then refreeze:

SUPER FUDGE PIE
1/2 c. butter
2 squares unsweetened chocolate
2 egs
1 c. sugar
1/4 c. flour
pinch of salt
ice cream or whipped cream on top
Melt butter & chocolate together; set aside. Beat eggs in a small bowl and gradually add sugar. Add flour & salt; then combine with chocolate mixture. Pour into ungreased 8" piepan and bake at 350 for 20-25 min. Cool and freeze. (does not need to be thawed out to eat) ... top with ice cream or whipped cream

ORANGE-ALMOND COFFEE CAKE

2 c. Bisquick
1/4 c. sugar
1 egg
1 tbsp. sugar
2/3 c. orange juice
2 tbsp. butter
1/4 c. sliced almonds
2 tbsp. orange juice

Grease round 9 x 1 1/2 inch pan. Mix baking mix, 2/3 cup orange juice, 1/4 cup sugar, butter and egg. Beat vigorously 60 strokes. Spread in pan, sprinkle with almonds.

Bake 20 to 22 minutes. Immediately sprinkle coffee cake with 1 tablespoon sugar, drizzle 2 tablespoons orange juice over sugar. Bake 5 more minutes. Serve warm.

BEER BAM CAKE
4 cups of sifter flour
12 pACK OF BEER.
3 cups of sugar.
1tbsp vanilla bean
2 eggs
5 cups beer (samuel adams) flour
------------bake in oven for 45 minutes until fluffy . preaheat ven to 560 degrees.

icing_______5 cups powdered sugar, and nutmeg.

Well you could continue to make the larger size cake, but divide the batter into two 9 inch pans. Eat one & freeze the other for later use. Or make the large one and what is leftover can be crumbled into ice cream, or pudding to make a more special dessert. You could also add fruits like cherries or strawberries.

My favorite cake fillings are either a lemon curd filling with 7 minute frosting OR Grand Marnier whipped cream with fresh strawberries. Even if you make a 9 inch cake, just cut it in half lengthwise and fill it.

1 cup chilled whipping cream
1 tablespoon sugar
1 tablespoon Grand Marnier

Beat chilled whipping cream, sugar, and Grand Marnier until peaks form. Gently fold in sliced strawberries. Use as filling between the two layers and then frost with 7 minute frosting.

7 minute frosting:
1 1/2 cups sugar
1/4 teaspoon cream of tartar or 1 tablespoon white corn syrup
1/8 teaspoon salt
1/3 cup water
2 egg whites
1 1/2 teaspoons pure vanilla extract

Place sugar, cream of tartar or corn syrup, salt, water, and egg whites in the top of a double boiler. Beat with a handheld electric mixer for 1 minute. Place pan over boiling water, being sure that boiling water does not touch the bottom of the top pan. (If this happens, it could cause your frosting to become grainy). Beat constantly on high speed with electric mixer for 7 minutes. Beat in vanilla.

Ingredients

8oz butter
8oz caster/superfine sugar
3 eggs
few drops of vanilla extract
10oz self raising flour sieved
3oz plain chocolate



Method

- Cream the butter and sugar until light and fluffy.
- Add the eggs and the vanilla essence with a little flour.
- Fold the flour into the mixture.
- Divide the cake mixture between two bowls.
- Melt the chocolate in a bowl over a pan of hot water and add to the cake mixture in one of the bowls.
- Drop alternate spoonfuls of plain and chocolate cake mixture into a well-greased 7 inch round cake tin.
- Bake at 180 degrees C. for 45 minutes.
- Remove from tin and cool on a wire rack.
