I tried making a Spanish Omelette. It went terribly wrong. Why?!


Question: So I followed the general recipie except I didnt use any onions. One problem might have been that I didnt make the potatoes soft enough before mixing with the eggs, but that wasn't too noticeable. I used 4 medium sized potatoes and 4 eggs. However, when I put the mixture in the pan, instead of making a nice round omelette, it was kinda not round. Again, that's okay too. But the thing is, the egg on the outsides became golden brown and then I flipped it and the other side became well done too, expect when I tried to raise it, it started to crumble and I noticed that the middle was still undone (the egg). In the end, I ended up eating it like regular scrambled eggs. What did I do wrong? And does anyone have any good recepies for making Spanish omelettes? Tips?

It sounds like you had the pan too hot. Just turn down the temperature so it will cook the contents all the way through. Are you mixing something in your egg mixture? That can sometimes make it more breakable. In scrambled eggs you add milk but when you make omelets you shouldn't do that. Hope that helps.

I cook all vegetables first ,chop and dice quite small,mix eggs.butter ,salt ,pepper,small amount of milk put in pan move about with fork so it is all cooked ,add cooked veg and fold in two ,all on medium heat. turn out onto plate.
