Baby Ruth Cookies Instructions:
Cream butter, peanut butter and sugar until light and fluffy; beat in beaten eggs add mix well; add vanilla.
Sift dry ingredients together and add alternately with the milk.
Stir in the cut-up Baby Ruth pieces.
Drop from teaspoon on buttered cookie sheets.
Bake in preheated 375~F oven until golden brown, about 12-15 minutes

Jam Thumbprints

3/4 pound (3 sticks) unsalted butter, at room temperature
1 cup sugar
1 teaspoon pure vanilla extract
3 1/2 cups flour
1/4 teaspoon kosher salt
1 egg beaten with 1 tablespoon water, for egg wash
7 ounces sweetened flaked coconut
Raspberry and/or apricot jam
Preheat oven to 350 degrees F.
In an electric mixer fitted with the paddle attachment, cream together the butter and sugar until just combined, and then add the vanilla. Separately, sift together the flour and salt. With the mixer on low speed, add the flour mixture to the creamed butter and sugar. Mix until the dough starts to come together. Dump on a floured board and roll together into a flat disk. Wrap in plastic wrap and chill for 30 minutes.
Roll the dough into 1 1/4-inch balls. (If you have a scale, they should each weigh 1-ounce.) Dip each ball into the egg wash and then roll it in coconut. Place the balls on an ungreased cookie sheet and press a light indentation into the top of each with your finger. Drop 1/4 teaspoon of jam into each indentation. Bake for 20 to 25 minutes, until the coconut is a golden brown. Cool and serve.
I like to use seedless Black Raspberry and Strawberry the best!
Also, I know that you said no chocolate chip, but these are chocolate chocolate chunk. SO GOOD!
BAKER'S CHOCOLATE COOKIES
Makes about 1 1/2 dozen cookies
16 squares Baker's semi-sweet baking chocolate
3/4 cup firmly packed brown sugar
1/4 cup butter
2 eggs
1 teaspoon vanilla
1/2 cup flour
1/4 teaspoon baking powder
2 cups chopped nuts, like walnuts or pecans (optional)
Heat oven to 350 degrees.
Coarsely chop 8 squares of the chocolate; set aside.
Microwave remaining 8 squares of chocolate in large microwavable bowl on high 1-2 minutes in 30 second intervals, stirring between each interval so as not to burn the chocolate.
Stir until chocolate is melted and smooth. Stir in sugar, butter eggs and vanilla. Stir in flour and baking powder.
Stir in reserved chopped chocolate and nuts. Drop by 1/4 cupfuls onto ungreased cookie sheet.
Bake 12 to 13 minutes or until cookies are puffed and feel set to the touch. Cool on cookie sheet 1 minute. Transfer to wire rack to cool completely.
A different spin on these is to not add the chocolate chunks or the nuts, but to add a half bag of Andes Mint chocolate chunks. It melts into the cookie and makes it this fantastic chocolate mint cookie...
How about Strawberry Shortcake. You can make shortcake from scratch, very similar to a biscuit recipe, quick too. Sliced strawberries, home whipped cream slightly sweetened.
Shortcake recipe:
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1/3 cup butter, cold and cut into chunks
7/8 cup milk
Mix and sift together dry ingredients. Working shortening with fingertips or a pastry cutter as you would make a pie crust or biscuits. Work quickly and keep everything cold.
And liquid gradually and blend only enough to make a soft dough. Turn out onto a lightly floured board. Roll lightly to 1/2" thickness.
Cut into 3 inch squares or with a round to 1/2" cookie cutter, or cut into six to seven inch circles for large shortcakes.
Bake in a preheated 450°F oven until shortcakes are crisp and very light and color, and this will depend on what size shortcake has been cut; the smallest been cooked in as little as 10 minutes or less, and the largest requiring 15 to 20 minutes, depending on your oven. Keep a sharp eye out and watch constantly to avoid scorching.
When done, remove from oven and allow to cool on wire racks, then split into halves as soon as possible.

You can always try these:
"PEANUT BUTTER BUTTERSCOTCH COOKIES"
1 cup peanut butter
1/2 cup Nestles Butterscotch morsels
1 cup sugar
1 egg
1/4 teaspoon vanilla
Combine all ingredients. Form dough into balls. Place on a cookie sheet. Press with a fork to flatten.
Bake in a preheated 350F degree oven for 10 minutes, watching carefully as you do not want to overbake or the cookies will be dry.
Remove to cool on wire racks. Store in an airtight container.
This recipe works well with chunky peanut butter, but a nice variation is to use Reese's Peanut butter, omit the butterscotch morsels, then dip the cooled cookies in Baker's dipping chocolate. It's a fun and easy cookie recipe for the kids!

Cookie Dough:
1/3 Cup butter
1/2 Cup Sugar
1 Egg
1-1/2 Cup Sifted flour
1/4 Teaspoon Baking soda
1/8 Teaspoon Salt
8 Ounce Canned crushed pineapple

1/4 Cup Chopped macadamia nuts or walnuts

Preheat oven to 350°F.
In large bowl, beat butter, sugar and egg until fluffy. Combine flour, soda and salt; beat into butter-sugar mixture alternately with pineapple. Stir in nuts (and figs optional). Drop by teaspoon on greased cookie sheet.
Bake for 10 to 12 minutes.
Glaze:
1 Cup Powdered sugar
2 Tablespoon Milk
Flaked coconut
While still warm, dip cookies into the glaze of powdered sugar and milk; then in coconut.
"CHERRY SHORTBREAD COOKIES"
INGREDIENTS
1 cup all-purpose flour
1/2 cup confectioners' sugar
1/2 cup cornstarch
1/2 cup chopped cherries
1 cup butter
DIRECTIONS
Preheat oven to 300 degrees F (150 degrees C).
Cream butter and confectioners' sugar together. Add the cornstarch and flour and mix well. Stir in the chopped cherries. Drop teaspoonfuls of the dough onto a cookie sheet then press with tines of a floured fork.
Bake at 300 degrees F (150 degrees C) until lightly golden, about 10 to 15 minutes.
