Guacamole

3 diced avocados
1 chopped tomato
1/2 cup chopped onion
2 tsp lime juice
1/2 cup chopped cilantro
salt.

Mix everything together and add more salt and lime juice to taste.

Love guacamole. I use ripe avocados, lime juice, onion, garlic and cilantro.
Mash the avocados then mix all the ingredients. Let it sit in the refrigerator for a few hours.

Yes I do love guacamole. :-)

3 Haas avocados, halved, seeded and peeled
1 lime, juiced
1/2 teaspoon kosher salt
1/2 teaspoon ground cumin
1/2 teaspoon cayenne
1/2 medium onion, diced
2 Roma tomatoes, seeded and diced
1 tablespoon chopped cilantro
1 clove garlic, minced

In a large bowl place the scooped avocado pulp and lime juice, toss to coat. Drain, and reserve the lime juice, after all of the avocados have been coated. Using a potato masher add the salt, cumin, and cayenne and mash. Then, fold in the onions, tomatoes, cilantro, and garlic. Add 1 tablespoon of the reserved lime juice. Let sit at room temperature for 1 hour and then serve.

Oh yes I do but I dont make it often as my hubby cant stand it. My recipe is as follows and the links included are of different recipes for Guacamole. Give a few a try and find your fav. You will notice some are super easy and some have a bit more depth to them. I think the more depth the better flavor.

Ingredients
1 avocado
1 cup sweet peas, thawed
1/2 cup chopped red onions
3 roma tomatoes, seeded
1/2 red bell pepper
3 garlic cloves
1 teaspoon cumin
1/2 teaspoon sumaq - if you cant find it dont add it. but it adds a interesting flavor thats for sure I love it.
2 tablespoons lemon juice
2 tablespoons yogurt or low-fat sour cream
1/2 coriander
2 tablespoons finely chopped cilantro
Directions
1Put all the ingredients, except the cilantro, into a food processor and pulse it until the ingredients becomes fairly smooth.
2Spoon into a decorative bowl or shallow dish lined with leaf lettuce.
3Sprinkle the cilantro on top and decorate with lemon and tomato wedges and serve.

I love my guacamole. 3 ripe black avocados, mash the avocado until smooth. Add the juice of a can of chopped green chili's and alittle salt to taste. I use a hand mixer to beat smooth. Check the salt at this level, and add more if needed, and add a tablespoon of the chopped green chili's. Dice a large ripe tomato and add to mixture, serve with your favorite chips. I like the flax seed chips from Harry and David but any good tortilla chips will do. This is a simple yet Delicious dish. Stir every once in while to keep incorporated, if there is any left.
