If the shellfish close (or close up tighter) when you tap them, you know they're alive -- therefore safe to eat.
If they don't react, they're dead -- and already becoming little nuggets of breeding bacteria.

With mussels, you need to go through them again once they're cooked: this time, throw out any that haven't opened during the cooking process. That's a tip I learned from a Weymouth diver, who gathers the things by the sackful for sale to restaurants.

Well, you want to throw it out because this usually means they have been dead for a long time, so there is a build up of bacteria and the lack of freshness will effect the taste.

You do kill them when you cook them but they are freshly killed so you ensure the highest quality....

you don't know how long they have been dead in there

Make sure it is open after cooking or don't eat it.
