Loaded mashed potatoes

5 lrg potatoes
1 pkg sour cream
1 block shredded mild cheddar cheese
1/4 cup real bacon bits
green onions (optional)
salt
pepper
milk and butter

Boil potatoes ( you can leave on skin if you like or boil peeled potatoes)
When done mash potatoes with milk sour cream and butter until creamy
Add cheese mash until melted then add bacon bits and green onions

you can also put them in a dish when done and add a layer of cheese and bacon bits on top and bake for 10-15 ,min for a cheesy top layer..soooo good.

Collard greens

1 bundle greens cut and washed
1 pck salt pork


Cut and clean your greens really well
put in pot of boiling water for about 2 minutes or until water is green to blanch them.
drain and then add oil at bottom of same pot
once pork is cooked add pork and greens together and add just enough water to almost cover greens.
Boil until tender. About 10 minutes give or take
Add about a tbs of sugar and you got you some good southern greens


Corn Casserole

1 pck jiffy cornbread mix
1 can cream corn
1 can kernal corn
1 small container sour cream
1 tbs sugar

mix cornbread, cream corn, corn (dont drain juicy, add that too) then sourcream and a dash of sugar.

Bake at 375 for about 1 hour

SCALLOPED POTATOES

6 medium potatoes (sliced; peel or not - up to you)
6 TB. butter
6 TB. flour
pepper to taste
1 tsp. salt
3 c. milk
grated cheddar cheese
In saucepan, melt butter; add flour, salt & pepper. Stir to a smooth past. Add milk, stirring constantly until thick ( a whisk is easiest). Alternate layers of sauce & potatoes in greased casserole. Sprinkle cheese on top. Cover and bake at 350 for about 1-1/2 hrs. ...... Serves 4-6

GREEN BEANS
Either steam fresh (or frozen) green beans .... or saute them with bacon until tender. Top with chopped tomatoes

prepare a box of Stove Top stuffing (or) open and heat a can of baked beans (or) make instant mashed potatoes (or) slice up some cucumbers and pour your favorite salad dressing over them.

Here are a few yummy ideas:

Cucumber Salad

Slice 2 peeled cucumbers. Slice thinly. Add 1 small sliced or chopped red onion. Cover with bottled red wine vinaigrette dressing. Salt and pepper to taste. Best if you let sit in refrigerator for at least an hour.

Bacon Salad

4 slices bacon
1 lg bowl salad greens
? chopped red onion
Salt
Pepper
Red Wine Vinegar

In salad bowl, combine the salad and onion. Coat with ? cup red wine vinegar, salt and pepper. Chop bacon into little pieces. Cook until crispy. (You may need to add a little olive oil if bacon is very lean). Pour bacon and grease over salad.

Broccoli Cheese Salad

4 cups broccoli, cut into small pieces
1 red onion, chopped
1 cup cubed cheddar cheese
6 slices bacon, cooked, crumbled

Combine above ingredients. Combine 1 cup mayonnaise, ? cup sugar, and 2 Tbsp vinegar, salt and pepper to taste. Pour over salad.

Corn Casserole
2 cans cream corn
2 cans drained corn
2 boxes jiffy corn bread
16 oz. sour cream
1 egg
2 sticks butter, cut into pieces
Salt and pepper to taste

Mix all ingredients thoroughly. Bake in casserole dish at 350 degrees for 1-1 ? hours.
Southwestern Ranch Salad
1 pkg. pre-cut salad mix
? cup shredded sharp cheddar cheese
1 cup ranch flavored croutons
? cup ranch flavored almond salad topping
Hidden Valley Spicy Ranch dressing
Salt and pepper to taste

Toss all ingredients together. Serve immediately.

Caesar Coleslaw

1 pkg pre-made coleslaw
1/4-1/2 cup shredded parmesean cheese
1/2 pkg caesar croutons
1 bottle creamy caesar dressing

Toss first three ingredients together. Add enough dressing to coat. It's even good the next day!
Spinach-Bacon Salad

1 8oz pkg. spinach
3 hard boiled eggs
8 mushroom caps, sliced
Toasted slivered almonds (optional)

Combine all ingredients and serve with Hot Bacon Dressing.

Hot Bacon Dressing

? lb. bacon, chopped
1 cup sugar
1 1/3 cups white vinegar
5 tsp. cornstarch

Fry bacon until crisp, drain and leave bacon drippings in skillet. Add sugar and vinegar to skillet and stir well. Add 1 cup water and bring to a boil. Mix cornstarch with 2/3 cup water, stir until it dissolves and pour into skillet with dressing. Return to boil and simmer for 5 minutes. Remove from heat, return bacon to skillet and toss dressing into salad.

Rice Salad

8oz Cooked, cold rice
Small tin Mandarin Segments- drained
2 tble. Salted Peanuts
Snipped Chives
2 tble Mayonnaise
1 or 2 tble Natural Yogurt

Mix all ingredients together and chill

Au Gratin Potatoes

Ingredients
* 1/4 cup butter or margarine
* 1/4 cup flour
* 1/2 tsp. salt
* 2 cups milk
* 1 cup shredded cheddar
* 1/2 cup freshly grated parmesan cheese
* 5 cups (about 5 med) peeled, sliced, raw potatoes
* 1/4 cup dry bread crumbs
* 1 Tbs. melted butter or margarine

Directions
1. Heat oven to 350 degrees.
2. In med. saucepan, melt margarine, stir in flour and salt. Add milk, cook until mixture boils and thickens, stirring constantly. Stir in cheeses and potatoes.
3. Pour into a 2 qt casserole or individual casserole dishes. Combine bread crumbs and melted margarine/butter, sprinkle over potatoes.
4. Bake covered for 1 to 1 1/2 hours or until bubbly and potatoes tender.
5. Garnish with chopped chives if desired.

Broccoli Casserole

2 pkg. frozen chopped broccoli, cooked and drained
1 can cream of mushroom soup
2 eggs 4 oz. of sharp cheese grated
3/4 cup mayonnaise
1 sm. onion chopped
1/2 cup ritz cracker crumbs.

Mix all ingredients except cracker crumbs. Pour into a square, well buttered baking dish. Sprinkle top with crumbs and dot with butter. Bake @ 350 for 30 min.

Really delicious

For me, BBQ ribs go with baked potatoes, tossed salad & corn on the cob--its simple stuff but it does it for me--(chocolate cake for dessert)..
