How do I make my cookies not flat?!


Question: Every time I make cookies, they come out flat! Does anyone know why? I'm using a good recipe on the back of the box, can someone help me?

Do you soften the butter at room temp for about 45 mins?
There's a lot of reasons that cookies come out flat.....either you've overcreamed the butter and sugars, or there's not quite enough flour, or the dough is too warm when it goes into the oven, or the oven isn't hot enough.....etc etc etc.

Try this one. It's betty crocker and I usually have great luck with anything by her!
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 cup butter or margarine, softened
1 egg
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt

1 package (12 ounces) semisweet chocolate chips (2 cups)


1. Heat oven to 375oF.
2. Mix sugars, butter and egg in large bowl. Stir in flour, baking soda and salt (dough will be stiff). Stir in nuts and chocolate chips.
3. Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet.
4. Bake 8 to 10 minutes or until light brown (centers will be soft). Cool slightly; remove from cookie sheet. Cool on wire rack.

Use baking powder instead of baking soda. I do this in every cookie recipe I make.

The incompable Alton Brown did a wonderful show on cookies. The recipes from it are on his site, but you really need to see the show to crock the wonderfulness of it all.

add extra flour and/or baking powder. put them in a ball on the cooking sheet and they'll flatten while baking.
