Cooking asparagus with a little vegatable oil is that really fattening?!


Question: Oil adds some fat calories as well as richness. Choose your oil wisely and look for something that's more heart healthy. Don't plan on drenching your asparagas in it, just use enough to drizzle etc. A suggested idea: steam asparagas in a little chicken broth until crisp tender. Remove from heat immediately and submerge in ice water to stop cooking. Drain well and pat dry. Make a mixture of 1 tablespoon olive oil, 1/8 tsp minced garlic, 1/4 tsp kosher salt, 1 tsp lemon juice, 1/8 tsp fresh ground pepper, and 1/4 tsp dijon mustard. Blend well and drizzle over cooked asparagas.

Not really. First off, it's good fat. (It's not hydrogenated or saturated.) Also, vegetables have very positive health effects, and if we need to add taste to make them palatable, it's still a positive net-gain.

And you're just cooking them in some oil. Half the oil is going to be left in the pan anyway.
