Is Dijon mustard the same as spicy brown mustard?!
Answers: I need to substitute one for the other in a chicken recipe, but I won't if it's not the same thing.
Spicy brown mustard has more brown mustard seeds in it and the spicy part is the fact that darker coloured mustards are spicer than the yellow one, now also to it can depend in the place the mustard is grown and how fine it is ground, dry English mustards are more pungent due to the species of plant, yellow ballpark mustard in the U.S is made from mostly Mustard grown here in Canada we produce the most in the world and export it as much as wheat and lentils.
Dijon is a fine yellow based mustard with a portion of the seeds in the mix being brown, the seeds are soaked in a solution of white wine and vinegar before grinding that is were the pungent taste from, for me I prefer a grainer mustard, I do like the US Guilldens type.
It's not the same thing. Dijon is milder, less tart/spicy. If it was me, I would substitute it rather than going to the store to buy it.
Dijon is a region from where many types of mustard come from but it is famous for being particularly strong.
As others have said...no, it's not the same. But I've always substituted one for the other in my recipes (I always seem to have one or the other...never both at once...) and I sincerely doubt anyone would be able to tell the difference.
