What else should I serve with lamb steaks tomorrow in honor of St. Patrick′s Day?!


Question: Champ to be served on St Paddys day
Potatoes
Spring Onions [Scallions]
300ml milk
seasoning
Butter

Boil potatoes until soft ready to mash

Heat milk with finely chopped spring onions
and add to the mashed potatoes along with a knob of butter [margarine] mix thoroughly and add seasoning to taste . In old days this was a on its own meal .. Serve with the lamb steaks and put a small knob of butter in the middle of the mash . Beverage should be a pint of Guiness

Oven roasted potato wedges and steamed cabbage would be simple and appropriate for Paddy's...If you don't like cabbage; braised leeks are an Irish favorite this time of year. (this stuff is too simple to give recipes so I won't)

If food coloring is available green mashed potatoes and green beers would be fun if not brussel sprouts or broccoli for a side...cole slaw.

For me as a chef because both it and Champ have the green fleck in them amd Colconnon is a one pot dish, here in Canada I used Savoy cabbage and a couple of bunches of curly kale, and I like to use floury potatos, the ones in the UK that are used for jacket potatos.

Just chop the lot relatively fine,and cook it down, for me I take 1/2 away and go at it with my hand blender, not to a puree but to a fine-ish texture and add back the other, season it up and add a bit of fresh chopped parsley.
