I really like this one:

Spinach-Bacon Salad

1 8oz pkg. spinach
3 hard boiled eggs
8 mushroom caps, sliced
Toasted slivered almonds (optional)

Combine all ingredients and serve with Hot Bacon Dressing.

Hot Bacon Dressing

? lb. bacon, chopped
1 cup sugar
1 1/3 cups white vinegar
5 tsp. cornstarch

Fry bacon until crisp, drain and leave bacon drippings in skillet. Add sugar and vinegar to skillet and stir well. Add 1 cup water and bring to a boil. Mix cornstarch with 2/3 cup water, stir until it dissolves and pour into skillet with dressing. Return to boil and simmer for 5 minutes. Remove from heat, return bacon to skillet and toss dressing into salad.

1 pound bacon, diced
1/4 cup flour
1 1/4 cups sugar
1/4 teaspoon salt
2 cups water
1 cup balsamic vinegar


Fry bacon until crispy
Remove bacon to paper towel covered dish to drain and cool
Reserve 1 1/2 teaspoons of the bacon fat
Combine flour, sugar, salt
Mix well with 1/2 cup water, let stand in mixing container
Heat vinegar and remainder of water to hot (do not boil)
Add the hot liquid to dry ingredients, stirring well
Add the mixture to the bacon fat still in skillet, and cook to desired consistency. (If gravy like texture is desired, you can bring to a brief boil. Overcooking with cause it to congeal into a thick ball)
If desired, you can crumble the bacon you fried and add to salad
Pour over your salad of choice and devour immediately.

After trying several Hot Bacon Dressing recipies over the past few months, this one was definitely a winner! I was happy with the ingredient list and ease of preparation. It even re-heated very well. ENJOY!

INGREDIENTS
8 slices bacon
1 1/2 cups white sugar
3 teaspoons cornstarch
1/2 teaspoon salt
1/4 cup water
1/2 cup white vinegar

DIRECTIONS
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
In a medium bowl, whisk together the sugar, cornstarch and salt, and slowly pour in water and vinegar, whisking constantly.
In a medium skillet, add the crumbled bacon and pour the vinegar mixture over it. Cook over medium heat, stirring constantly, until mixture thickens.

ok, this is one of my favorites. fry several strips of bacon until crisp and reserve fat. gently warm 1 cup of ranch or bleu cheese dressing and start to add bacon drippings until dressing starts to turn a little yellow. serve generously over baby spinach with sliced mushrooms and sliced hard boiled eggs with crumpled bacon. THE BEST!!
