honey mustard vinegrette

My standard dressing is

1 TBSP vinegar
1 large clove garlic minced or pressed
1/2 tsp dijon mustard
1/4 tsp dried thyme
salt and pepper
2 TBSP olive oil

But I vary it a lot, using different vinegars, lemon juice, adding some jam, or cheese or citrus zest. The variety is good because we have salad frequently. I like the 5 element salad approach using one each of

leaves (lettuce, spinach, arugula, cabbage...)
nuts or grains (walnuts, pine nuts, almonds, wild rice, bulgar...)
fruit/veggie (tomato, dried cranberries, orange segments...)
Cheese (blue, parmesan, swiss, cheddar...)
Surprise (capers, another fruit, pepperocini, artichokes...)

there are literally a million combinations and its really creative fun. Then a simple vinegrette is all you need.
