Question: Pot Roast: Get a 2-3 lb. cross rib roast. No bone.. Brown in skillet on both sides. Cut up 1 large onion, fairly large pieces. Add to the bottom of a slow cooker. Put the roast on top of the onions. Add salt and pepper to taste. Add 1 pkt onion soup mix, Lipton is great. Cover the roast with just enough beef stock to cover. Cook on low for about 8 hours. You can use fresh potato's but I like the canned whole potato's. Cut in chunks. Add 2 cans baby carrots and cook until the potato's and carrots are hot, about 1 hour. UM,UM,GOOD.

INGREDIENTS:

* 8 ounces elbow macaroni or small shells
* salt
* 3 tablespoons butter
* 3 tablespoons flour
* 1 cup chicken broth
* 1/2 cup heavy cream
* 3 to 4 ounces smoked gouda cheese, shredded or cut in small pieces
* pepper, to taste
* 1 teaspoon fresh parsley, optional
* 1 1/2 to 2 cups cubed cooked chicken
* 1 1/2 cups frozen peas and carrots, thawed
* 1/2 cup soft bread crumbs
* 1 to 2 teaspoons butter, melted

PREPARATION:
Cook macaroni in boiling salted water as package directs. Drain and set aside.

In a saucepan over medium low heat, melt butter; add flour. Cook, stirring, until flour mixture is well blended and bubbly.

Glazed Sweet Potatoes
?2 pounds medium sweet potatoes, cooked, peeled, and cut up
?1/4 cup butter
?1/4 cup maple syrup
?1/4 cup light brown sugar, firmly packed
?1/4 teaspoon cinnamon
Place cut up sweet potatoes in a buttered 2-quart baking dish. In a saucepan, combine remaining ingredients; cook until mixture boils. Pour over potatoes; bake at 350° for 30 minutes, or until hot and nicely glazed.

Stuffed Squash

3 med. squash
1 chicken bouillon cube
1/3 c. boiling water
? -1 C corn
1 c. mashed white potatoes
1 slightly beaten egg
4 tbsp. butter
1/2 tsp. salt
Dash pepper

Cut squash in half lengthwise, remove seeds. Butter cut edge and place cut side down on baking sheet. Bake at 400 degrees for 30 minutes or until tender. Scoop squash from shells; save shells. Mash squash; add egg.
Dissolve bouillon in water, add to squash. Cook corn in butter until tender, not brown. Stir potatoes in with corn. Reserve 1/4 cup of potato/corn mix. Add rest of mix to mashed squash, add seasonings. This mix will be thin. Put into shells, top with reserved stuffing mix. Bake at 400 degrees for 25-30 minutes. 6 servings.

Chicken and Bacon Parcels with New Potatoes

Per person, for this recipe, you will require:

1 chicken breast fillet
2 large rashers of unsmoked bacon
1 small tomato (sliced)
2tsp coriander, cilantro in US (roughly chopped)
1 clove of garlic (finely chopped)
Freshly ground black pepper
Olive oil
4 or 5 small new potatoes (unpeeled)
Small knob of butter
Pinch of dried dillweed

Place a couple of slices of tomato on the underside of the chicken breast, cover with coriander and garlic and wrap the bacon around it. Place the parcel in the dish and cover with any remaining coriander. Add some pepper and olive oil. Put the lid on the dish and cook in a preheated oven at 200 degrees Celsius for 20/25 minutes. Check that the chicken is cooked all the way through by inserting a metal skewer or fork and ensuring the juices run clear.

NB: no additional salt is required in this dish as the bacon provides all that is necessary.

Boil the new potatoes in salted water for about 25 minutes, drain well then add the knob of butter and the dill and swirl them gently around the pot to ensure thay are fully coated.

SWEET 'N SOUR CHICKEN DINNER

6 med. carrots, cut in chunks
1/2 c. chopped green pepper
1/2 c. chopped onion
3 chicken breasts
1/2 tsp. salt
10 oz. jar sweet & sour sauce
15 1/4 oz. can pineapple chunks
3 tbsp. cornstarch
3 tbsp. cold water
Cooked rice

Use crock pot. Place carrots, green pepper and onion on bottom. Top with chicken. Sprinkle salt. Pour sweet and sour sauce and pineapple chunks over chicken. Cook: low setting - 7 to 8 hours; high setting - 3 1/2 to 4 hours. Remove chicken and keep warm. Blend cornstarch and water and stir into juices in crock pot, cooking until it thickens. Season to taste with salt and pepper. Serve over rice.
