What are your favorite healthy recipes?!
Ingredients:
* 14 oz. pkg smoked turkey sausage (may use diced chicken breast instead)
* 1 lg. bell pepper, thinly sliced
* 1 (8 oz.) pkg portabella mushrooms, rinsed and sliced
* 1 Tbsp. minced garlic
* 1 cup reduced-fat parmesan cheese (finely shredded is best)
* 3 cup fat-free Half & Half
* 1 Tbsp. flour
* 2 Tbsp. butter (or I Can't Believe It's Not Butter)
* 2 Tbsp. Extra Virgin Olive Oil
* Penne pasta (cooked al dente and drained)
* 1 Tbsp. Creole Seasoning (Tony Chachere's Original)
Method
In a large saucepan, pour in olive oil and saute sausage, bell pepper, mushrooms, and garlic until sausage is cooked thoroughly. Drain. Place the meat and vegetables in a large bowl and put aside. In the saucepan melt butter and add flour, browning flour to make a roux. Slowly add in half & half, beating briskly with a whisk continuously. Add seasoning and parmesan to the sauce, mixing until cheese is completely melted. Add meat and vegetables to the sauce and mix thoroughly. Serve immediately over hot penne pasta.
Notes: This is a simple healthy recipe that has been a favorite in my family. Even the children have enjoyed this spicy dish.
Mediterranean Meatballs
These meatballs are made with beef or lamb and served with a sweet sauce flavored with raisins, cinnamon and honey.
Ingredients:
* 1 1/2 pounds ground beef or lamb
* 5 onions finely chopped
* 2 eggs
* Salt and pepper to taste
* 1 slice bread soaked in water and drained
* 1/2 cup oil
* 1/4 cup raisins
* 1/2 cup water
* 1 Tablespoon cinnamon
* 2 Tablespoons honey
Method
In medium bowl mix together the meat, one chopped onion, eggs and bread. Season with salt and pepper. Form into small balls. Heat 1/4 cup oil in a skillet over medium-high heat and saute the meatballs until browned. Remove from pan and set aside. In large saucepan heat remaining oil and fry onions until golden. Add meatballs, raisins, cinnamon, honey and water. Bring to a boil and reduce heat and simmer for about one hour, check seasoning and add salt and pepper before serving.
Notes: This is my version of an authentic dish from Morocco. It captures the flavors of middle eastern cookery and is delicious served over couscous or wrapped in pita bread.

just add your favorite fruit and some soy milk or soy yogurt and a little sweetner and this does taste awesome
i like bananas, kiwi, peaches, cut up apples, watermelon, cantelope, and a little wheat germ
Baked Chicken Breast on Potato Rosti
Per person you will need:
1 lean chicken breast
1/2lb potatoes (peeled and coarsely grated)
1/2 small onion (peeled and coarsely grated)
1/2 small beaten egg
2 cloves of garlic (crushed)
Pinch of dried sage
Salt
Tbsp low fat soured cream
Tsp freshly chopped coriander (known as cilantro in US) plus a pinch extra to garnish
In a small dish, mix the soured cream, one of the garlic cloves and the coriander thoroughly together and refrigerate.
Preheat your oven to 200 degrees centigrade or equivalent. Wrap the chicken breast(s) loosely in aluminium foil and place on a baking tray - no seasoning, no oil, just the chicken. Bake for 25/30 minutes, ensuring the chicken is properly cooked and the juices run clear.
Put the grated potato and onion into the centre of a clean tea towel, bring up the four corners to fashion what looks like a piping-bag and, over the sink, squeeze out as much of the water as you can. Place it into a bowl and add the egg, remaining garlic, sage and salt and stir well. Put a little sunflower oil into a large frying pan and bring it up to a medium heat. Add the mixture and shape into a circle about 1/3" (1cm) thick. Cook for ten minutes each side.
Put the rosti onto a large plate and the chicken breast on top. Spoon on the soured cream and garnish with a little coriander leaf.

I live by a very easy rule...." Keep it simple and keep it small".
Foods don't have to covered with heavy sauces or gravies or butters . They cover the true taste of foods and have bad fats that cause all sorts of problems..... including bad skin.
I eat everything on a salad plate. Last night that was a baked chicken breast with sauteed zucchini and a small salad with low calories dressing. Keep cut carrot sticks in the refrig with low calorie Ranch dressing. Far better than a candy bar or potato chip snack.
Drinks lots of water.
