How long should I roast my 9 1/2 lb corned beef?!

Use a spice rub. Cover with foil and cook without checking on it. Cook at 250 degrees for about 5 hours. Don't peek until the 5 hour mark. When you do check it, cut in half and it should be pink and spongey. Good luck and Happy St. Patrick's Day!!!

I've never heard of roasting it in the oven; I was always taught to boil it. If you boil it, you do so for 2-3 hours no matter what size it is (I guess towards the longer end of that for a larger cut like yours). You can throw in cabbage, potatoes, carrots, and other root vegetables to have an all-in-one supper.

I usually boil mine for about 35 min and then i roast it in the oven for about 1 hour at 350 degrees . and then I boil the cabbage in the water I boiled the corn beef in . good luck .

Everything that I have says boil it for 1 hour per pound. Nothing says that you have to boil it whole. Cut into manageable pieces that fit your largest pot.

Call me a traditionalist but I would not put it in the oven. If you must, I would definately cover it tightly and put in a good amount of moisture.

I think you could make a spice rub of traditional Corned beef spices , rub meat all over and roast in a 225-250F oven , tightly wrapped in aluminum foil,. Maybe use a 1/2 sheet pan with a rack in it, so the meat won't rest in fat, you may have to drain roast several times . Do not trim fat first leave it all and roast fat side up That will allow for juicier, less dry meat I'm taking a guess at 8 hours roast time . If you have a closely trimmed "Flat Cut " Brisket with little fat on it you will be advised to cut the meat into smaller pieces and simmer or to braise it..in a roasting pan. Good luck
