What is a good way to cook corned beef without leaving it dry?!

Question: I did it in a Crock Pot once, it turned out very Juicy because all the meat juices stay in the pot and cannot be "cooked away"
Put cut-up potatoes and carrots in the bottom maybe 1/2 to one cup water and cook all on low for 8 hours.

my mom does it in a crock pot.

For succulent corned beef, use a crock pot. The slow cooking process is perfect for tender corned beef and if you work and are gone all day, the finished meal is ready when you return home.
Into your crock pot, add 1 package of Lipton Onion soup mix add the amount of water listed on the package, stir the mixture, then add your corned beef. The water should just cover the corned beef, it not, add a little water.

Corn Beef and Cabbage Dinner: YUM YUM!!!!!!! Make it in a pot of water just like you would make any ham boiled dinner.
Add vegetables, such potatoes, carrots, onions & turnip too. Even if you don't like cabbage as a vegetable put some in just for the flavor.
This has always been a family favorite in my house.
Good luck!
