Answers: Why does mine liquify over night in fridge?????
you probably have too much mayonaise(sp?) in it
it could be a lot of things
too much humidity ( check your fridge for humidity control feature and adjust )
too much mayo
the eggs were still warm when you mixed it
not the right fridge temp
there was a lot of excess water in the celery or onion ( maybe you forgot to dry the celery after you washed it)
did you change your brand of mayo?
did you change between salad dressing and mayo?
do you use pickles? try drying them with paper towels after you cut them up.
if you use pickles and changed brands that can affect it. different brands use different pickling agents.
my advice is keep the eggs and mayo mixture seperate till just before you want to eat it. its how resturaunts do it
i think mayo is the problem as well.
but if not... i cant think anything.
i add dried parsley when my salad liquify.
Mayo has lemon and/ or vinegar.....which causes your ingredients to break down. also the salts in the ingredients will draw out all the water....the only way you can avoid this is to make your egg salad as needed.....
Too much mayonnaise will break it down and it will get watery, it happens with tuna fish also, so you need to go easy on the mayonnaise.
