A little vinegar-it will tenderize the chicken and won't leave any flavor.
People say plain yogurt also works, but I couldn't tell the difference when I tried it.
it depends, while you can slow cook chicken until it shreds, the better way is to make sure you slice the chicken across the grain. then your pieces of chicken will be far more tender.
also, try marinating in orange juice or pinapple or lime juice. that should compliment the thai curry flavor.
