I am looking for a spicy or mexican-style catfish recipe. Do you know of any?!

Answers: I am planning to cook catfish fillets tonight. I want to bake them in the oven, do them on the George Foreman grill, or pan fry them (prefer to bake them though). I do not want any sort of breading or batter on them. I was thinking maybe a mexican-style catfish with a can or Rotel or something. Also, nothing cheesy please ... cheese on catfish sounds GROSS!!!

I would use the Georgie Grill......no breading....seasoning with a Cajun flavor. Top with the Rotel.......make up Rice with sweet red and green bell peppers and maybe onions...and because today is St Patricks Day....I would add green food coloring to the rice before I cooked it....and Yes cook the veggies in there all at once....
Geezzz........cheese on fish....why eat fish....that would be awful....

catfish don't bake or grill real good. if that is the way you want them saute them in some good zanarhans seasoning or Cajun mix for about 2 to 4 hours for a spicy taste. not sure on the Mexican ???
I would just use a blackening seasoning and serve with mexican rice (you can use the rotel in the rice). May I also suggest using Taliapia in the future instead of catfish? It has a very light flavor and cooks quickly.
I cook mine on the Geoge Foreman all the time. Wash the fish and then pat dry. Put them on a plate and then LIGHTLY rub in a little olive oil on both sides. Then sprinkle and rub in some hot sauce, soy sauce and lemon. Salt and pepper and garlic powder if you have it. Cook on medium heat on the grill for about 4-5 minutes then check for doneness and if need be flip and cook a little more til white and flaky. Really good with some grilled veggies with the same seasonings as the fish. Cook the veggies (Squash, tomatoes, eggplant) first so they don't taste like the fish.
