Can anyone recommend a quick easy to make mustard sauce for corned beef?!
1 tbsp butter
2 tbsp flour
1 cup of stock
salt and pepper to taste
1 tsp dry mustard
? tsp vinegar
1-2 tbsp cream
1 egg yolk
In a heavy saucepan, melt the butter.
Add flour, stir to make a roux and cook gently until golden brown
Away from the heat, stir in the stock.
Blend well, return to the heat, reduce heat and simmer until smooth and thick.stirring constantly.
Add salt and pepper to taste, but go easy on the salt, as corned beef is salty already!
Blend the mustard and vinegar with a little of the sauce until smooth, then add to the main sauce. Blend it in nicely.
Away from the heat, stir in the cream and the beaten egg yolk.
Serve the corned beef hot, with potatoes, carrots and peas. Smother with the mustard sauce and devour!

Mix mustard with some sugar and honey, or even mustard with hot sauce or pepper flakes. I've heard of sweet glazes too. Sweet with the salty corned beef would be good too!!

Honey mustard is the best unless you want to add some horseradish to some mustard for a kick!
