Here is an interesting cookie recipe, hope this helps.
Crisp Little Lemon Cookies
INGREDIENTS
1 (18.25 ounce) package lemon cake mix
1 cup crisp rice cereal
1/2 cup butter, melted
1 egg
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, combine the cake mix and crispy rice cereal. Stir in the egg and melted butter until everything comes together.
Roll into firm 1 inch balls and place them 2 inches apart on an unprepared cookie sheet. Bake for 10 to 12 minutes in the preheated oven. Cool for 1 minute on the baking sheets before removing to cool completely on wire racks.
For that many people, let your deli at the grocery store do it for you. Or the bakery.
Here is one we like at home for "two" people. :o)

I've used this recipe, it was fantastic:

Pumpkin Cookies! I guess they're usually a fall cookie, but I think they'd be good any time of year.
I replaced 1/2 cup butter with 1/4 cup applesauce to make it fat free. Of course you could just use butter if you prefer it.
Whole Wheat Gingersnaps
INGREDIENTS
* ? cup applesauce
* 1/2 cup white sugar
* 1/2 cup molasses (I used Karo syrup)
* ? cup milk
* 2 cups whole wheat flour
* 1/2 tablespoon baking soda
* 1 1/2 teaspoons baking powder
* 1/2 tablespoon ground ginger
* 1 teaspoons ground nutmeg
* 1 1/2 teaspoons ground cinnamon
* 3/4 teaspoon ground cloves
* 1/4 cup white sugar for decoration
DIRECTIONS
1. Preheat the oven to 350 degrees F (175 degrees C). Grease cookie sheets.
2. In a large bowl, mix together the applesauce and sugar until smooth. Mix in the eggs, and then the molasses. Combine the whole wheat flour, baking soda, baking powder, ginger, nutmeg, cinnamon, cloves, and allspice, heaping the measures if you like a lot of spice. Stir the dry ingredients into the molasses mixture just until blended.
3. Roll the dough into small balls, and dip the top of each ball into the remaining white sugar. Place the cookies about 2 inches apart on the cookie sheets.
4. Bake for 10 to 15 minutes in the preheated oven, until the tops are cracked. Bake longer for crispy cookies, less time for chewy cookies. Cool on wire racks.
