Cooks, Chefs, People who know receipes!! Help!?!


Question: I'm doing a country project and I need a Brazilian receipe. My mom (who is Brazilian) told me to find the receipes of these foods:

Vatapa
Empadinha
Pastel
Pao-de-queijo

My mom says she only had pao-de-queijo, and it was good. But she never tried the others. So which might be best for a school project that represents traditional food from Brazil?? Sites with recipes would be great! thnxx

Empanadas
Basic Dough, recipe follows
Apricot Filling, recipe follows
1 1/2 teaspoons sugar
1/2 teaspoon ground cinnamon
Preheat oven to 400 degrees F.
Roll dough to 1/8-inch thickness. Cut into circles, 3 inches in diameter; a plastic lid from a 1 pound coffee can makes perfect circle cutter. Dampen the outside edge of the circle with water. Place 1 1/4 tablespoons of apricot filling in the center of each pastry circle. Fold pastry in half over filling and pinch together to seal; can press with fork to seal. Mix together sugar and cinnamon. Sprinkle over each Empanada. Place Empanadas on a baking tray and bake for 15 to 20 minutes.
Basic Dough:
3 cups flour
1/2 teaspoon salt
2/3 cup shortening
1/2 cup cold water
Mix flour and salt in large mixing bowl. Add shortening. Blend flour and shortening into little pieces to look like tiny peas. Add water all at once by sprinkling. Stir with fork to incorporate water into mixture. Add more water if needed. Flour your work surface and hands, scoop dough out of the bowl, and place it onto your work surface and pat into a ball. Divide into 3 or 4 smaller balls.
Apricot Filling:
1 pound dried apricots
Approximately 3 cups water
3/4 cup sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 cup roasted and shelled Pinon (pine-nuts) (optional)
Place dried fruit in a large pan and cover with water. Cook at medium heat until fruit is soft and almost mushy. Drain excess water. Mix sugar, cinnamon and nutmeg (Pinon nuts are optional) into the fruit mixture, stirring until it is thick. Set aside to cool.
NOTE: Any kind of dried mixed fruit or combination may be used.

VATAPA

1 hen or 2 fryers
Water
2 green peppers, chopped
2 lg. onions, chopped
2 sticks butter
2 (8 oz.) pkg. spaghetti
1 can drained English peas
1 can pimento, chopped
1 lb. processed cheese
Salt and pepper to taste
1 can tomatoes and chili peppers

Cover hen with water; simmer approximately 3 hours over low heat. Finish with 3 cups broth. Let cool in broth. Saute green peppers and onions in butter for 45 minutes. Remove bones and chicken. Cook spaghetti in chicken broth and add water as needed. Don't drain. Add peas, tomatoes, pimento, cheese, chicken and sauteed peppers and onions. Add salt and pepper. Bake in casserole dish at 325 degrees for 30 minutes.

sorry i could only find the recipes for vatapa, but i also think that vatapa would be the best because it looks kind of easy and really tasty too.

Do you have a market where you can buy imported ingredients? Do you want to make an easy finger food or something more complicated?
I am not Brazilian, but I lived in Manaus (Amazonas) as a youngster. The best foods in that area were fish (vatapa, pudding, caldo, etc.), local tropical fruits, and of course the wonderful feijoada completa. If you want something that can be easily taken to a school room, your mother's suggestions (excepting vatapa) are very good. Perhaps you might consider doce de maracujá. The only ingredients are fruit, water and sugar, and you serve it cold. I see that there is a Wiki site for Brazilian cuisine. Perhaps that would be of use to you.
