I want to make a really, really good chicken stew. What recipe would you suggest?!


Question: Chicken Stew
5 chicken breasts, cut into small pieces (or chicken breast)
1/4 cup margarine
1(10ounce)can cream soup(I prefer cream of chicken)
2 cups frozen vegetables
salt and pepper
milk
basil
garlic powder
flour
Cook chicken and set aside. Melt 1/4 cup of margarine in pot; add flour until it becomes a thick paste. Add milk until it becomes a thick sauce stirring constantly. Add 1 can of cream soup and 1/2 a can of milk. Make sure sauce is slightly thick. Put in frozen veggies, chicken and seasonings. Cook on low heat for about an hour.

Chicken Stew:
Cream of Chicken soup -- 2 cans
Onion -- 1
Chicken, pieces or breast (add a little oil if they are skinless)

Just put the onions and chicken in pot let it cook for a lil while add water, soup and seasoning and let it cook.-

And the lima beans below go well with it.....



Lima Beans
1 bag frozen baby lima beans
Onion -- 1 or half of 1
Water
Sugar -- prolly 2 tablespoons
Seasoning to your liking
Dump it all in and just let it cook

Chicken in a crock pot.

Roast your chicken and debone it. add meat to crock pot. add a cup of flat noodles, a cup of corn, peas, carrots, chopped onions, chopped celery and at least 16 ounces of chicken stock. Cook on high for two hours, reduce to medium for 4 hours and put on high again for another hour. When the stew is hot and bubbling, drop in some dumpling batter, as below. Let the dumplings rise (about another 15 minutes). Serve immediately. If there are any dumplings left over be sure to stir them into the stew, basically disintegrating them and incorporating them into the broth, which will become very thick and delicious the next meal.

I always use the dumpling recipe on the Bisquick box, it's so easy to use and works perfectly every time.

I forgot to add that I season at the table. The roast chicken adds so much flavor that you may not want to season before serving.

I recommend the following - I have gotten very good reviews from people whenever I make it.

Chicken Stew with Cornmeal Dumplings
Start to Finish: 40 minutes

Ingredients
1 14-ounce can chicken broth
1 10-ounce package frozen mixed vegetables
1 cup frozen small whole onions
1/2 cup water
2 teaspoons snipped fresh basil, oregano, or dill; or 1/2 teaspoon dried basil, oregano, or dill, crushed
1/2 teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon black pepper
1 cup milk
1/3 cup all-purpose flour
2 cups cubed cooked chicken or turkey or two 5-ounce cans chunk-style chicken or turkey
1 recipe Cornmeal Dumplings

Directions
In a large saucepan combine chicken broth, frozen vegetables, onions, water, dried herb (if using), salt, garlic powder, and pepper. Bring to boiling.

Meanwhile, in a small bowl combine milk and flour; stir into vegetable mixture. Stir in chicken. Cook and stir until thickened and bubbly. Stir in fresh herb, if using.

Drop dumpling mixture from a tablespoon to make 4 to 8 mounds on top of the bubbling stew. Simmer, covered (do not lift cover), over low heat for 10 to 12 minutes or until a wooden toothpick inserted in a dumpling comes out clean.

Makes 4 servings (about 6 cups)

Cornmeal Dumplings: In a medium bowl stir together 1/2 cup all-purpose flour, 1/2 cup shredded cheddar cheese, 1/3 cup yellow cornmeal, 1 teaspoon baking powder, and dash black pepper. In a small bowl combine 1 beaten egg, 2 tablespoons milk, and 2 tablespoons cooking oil; add to flour mixture, stirring with a fork just until combined.
