i like doing pork tenderloin. its super easy!

1 pork tenderloin (with no flavoring)
2~3 cloves garlic, minced
salt
pepper
thyme
Cajun seasoning
extra virgin olive oil
3~4 golden or new potatoes
1 large or 2 med onions
3~4 good sized carrots
5~6 button or baby portabella mushrooms
1/2 T.sugar
heat oven to 375*
in a roasting dish
rub your tenderloin with extra virgin olive oil & garlic ( save some garlic). sprinkle salt ,pepper, thyme,& cajun seasoning.
cut potatoes & carrots in 1 to 2 in squares ( make sure theyre equal so they cook at the same rate) quarter onions.
toss potaoes, carrots, onions, mushrooms, & garlic in olive oil, salt, pepper, cajun seasoning, thyme, & sugar.
surround tenderloin with veggies & bake 45 min or until tenderloin, when poked, juices run clear & potatoes are soft.

Pot Roast

put ionthe oven and add potatoes and carrotts and spices and bake 350 an hour. tastey

Hot Pot:- English
Ingredients
6 Potatoes
1 1/2 lb Lamb shoulder or breast
2 Lamb kidneys [optional
1 Large onion , sliced
Salt and pepper
1C Water
2T Melted butter.
Preparation
Place half the potatoes in greased casserole, then add meat, cut into cubes. Cover with sliced onion and season with salt and pepper. Add water. Place remaining potatoes on top, covering meat completely. Brush with melted butter. Place in moderate oven 350 F and cook for 2 hours. Serves 4-6

Often this will be prepared in individual oven dishes and served individually.

Serve these with apple sauce and a salad.....

Mike’s Pork Chops

4 boneless pork chops 1/2-3/4” thick
? C parmesan cheese, finely grated
1C plain or Italian bread crumbs
2 eggs – lightly beaten
6T oil
1T butter

Wash pork chops, pat dry
Salt and liberally pepper the pork chops
Dip in parmesan cheese, coat well, shake off any excess
Dip in eggs both sides, get off excess
Dip in bread crumbs

Put oil and butter in pan
Put on medium to medium high
Let oil and butter heat up

Put pork chops in skillet; cook 6-7 minutes on each side until crisp. Don’t keep flipping them. Cook one side then the other.

Remove and serve

do a crockpot meal

cut up and onion
green pepper
1 pack of mushrooms sliced
5 pieces of chicken skinless
1 large can of tomatoes
1 tablespoon of minced garlic
salt and pepper

cook on high for 6 hours
or low for 8 hours

serve over rice or noodles

it is great and easy to make

spaghetti, lasagna, pork chops, stir fry, etc...

TEXAS HASH

1 lb. lean ground beef
3 large onions, sliced
1 large green pepper, chopped
1 16-oz. can tomatoes
6 oz. tomato juice (or measure the liquid from canned tomatoes and add a little water to equal 6 oz)
1/2 c. uncooked rice
1/2-1 tsp. chili powder
1 tsp. salt
1/8 tsp. pepper
crushed tortilla or corn chips for on top
Heat oven to 350. In large skillet, brown ground beef & drain off fat. Add onions & green pepper; cook and stir until onion is tender. Stir in rest of ingredients (except chips). Pour into large casserole dish. Cover and bake for 1 hour. Serve with crushed chips on top .... serves 4-6
GREEN SALAD is good with this

tastefully simple chicken... just get some boneless skinless chicken and the sprinkle season salt on it and put it in a pan 10 min each side done! yummy!

Chicken in a Skillet:
Frozen boneless skinless chicken breasts
Can of Campbell's Herb Cream of Chicken
Rice
In a skillet, place a Tbl spoon of oil. Heat oil, place in chicken breasts and brown slightly. Drain. Pour soup & one soup can of milk over chicken (mix). Cover skillet and simmer for about 20 minutes
Make white rice. Serve Chicken on top of rice.

ROAST:
1 boneless chuck roast (3 lbs) (season however you like ( i use Red Robin seasoning)
1 large can beef broth (+ water enough to cover roast)
Place in crock pot. Cook on low overnight (8-12 hours) (the last 2 hours place new potatoes and carrots in crock pot with roast)
Serve

Here is a very simple meatloaf recipe, a big hit in my household
Parmesan Meat Loaf

1.5 lbs ground extra lean ground beef
5 oz grated parmesan cheese
1/2 cup eggbeaters OR two eggs
2 Tbsp parsley
1/2 tsp black pepper
1 clove garlic, chopped
1 chopped onion

Mix together. Form into loaf. Bake 375 degrees 30-45 minutes
