Basic quiche recipe?!
Answers: Hi, I am just looking for a basic quiche recipe (quick and easy one if poss) that I can then just add other ingredients to vary type of quiche as I please. Hope this makes sense!!! Thanks.
QUICHE LORRAINE;
Ready made short crust pastry from the supermarket
100g/4oz streaky bacon
150ml/quarter pt milk
150ml/quarter pt fresh single cream
3 standard eggs, beaten
large pinch grated nutmeg
salt and pepper
1. Roll out pastry. Use to line 20cm/8inch flan ring resting on lightly buttered baking tray.
2. Cut bacon into strips. Fry lightly in its own fat until soft but not crispy.
3. Drain thoroughly on kitchen paper. Use to line base of pastry case.
4. Heat milk and cream to just below boiling point. Combine with beaten eggs.
5. Season with grated nutmeg and salt and pepper to taste. Pour into pastry case.
6. Bake in centre of moderately hot oven 200C/400F/gas6 for 10 minutes. Reduce temp. to moderate 160C/325F/gas 3. Bake for further 35-45 minutes ( or until set ).
7. Serve hot.
Serves 4-5.
there is a good and easy recipe for quiche using bisquick...that way you don't need a shell
just put quiche in the search engine and you are good to go

4 eggs
2 cups half-and-half cream
1/8 teaspoon salt
1/4 teaspoon white pepper
1/8 teaspoon ground nutmeg
4 ounces Jarlsberg cheese, shredded
2 ounces mozzarella cheese, shredded
1 (9 inch) unbaked pie shell
cooking directions:
Preheat oven to 425 degrees F (220 degrees C).
In a large bowl, whisk together eggs and half-and-half. Season with salt, white pepper and nutmeg. Place shredded Jarlsberg and mozzarella in the pie shell. Pour egg mixture over cheese.
Bake in preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C), and bake for 25 minutes, or until crust is golden and filling is set. Allow to set 5 to 10 minutes before serving.
Yield: 6 servings
BASIC QUICHE

Ingredients:
5 large eggs
3/4 cup milk
1 frozen 9-inch deep dish pie shell
Directions:
1 Preheat oven to 350 degrees Farenheit.
2 Beat eggs in a large mixing bowl.
3 Add filling and milk and mix well.
4 Pour mixture into frozen pie crust.
5 Place quiche on cookie sheet and bake on the middle oven rack for 45-50 minutes, or until top is browned and a knife inserted in center comes out clean.
Depending on your filling I would serve a quiche with a light salad or fresh fruit on the side.
This is quite a big quiche so it could serve maybe 2-4 people

Here's a healthier version of Spinach, Mushroom and Feta Quiche that you can put variations on. This isn't my recipe, it came from sparkrecipes.com.
-4 lg eggs
-1/4 C. Reduced Fat Sour Cream
-1/4 C. Skim Milk
-2 C. Fresh Mushrooms, Sliced
-2 tsp. Garlic, minced
-4 tsp. Olive oil
-1pkg Spinach (10oz), thawed and drained
-1/2 C. Feta cheese, finely crumbled
-1 Tbsp Parm Cheese, grated
-1 Prepared 9" pie crust
Directions
1. Preheat oven to 375
2. Thaw spinach and pie crust (check directions on package of pie crust - some can be used frozen)
3. Sautee garlic and mushrooms in olive oil (If using fresh spinach, throw that in as well)
4. whisk sour cream, milk, and eggs until smooth (works best if sour cream and milk are mixed first and then eggs are added)
5. Add spinach, mushrooms, garlic, and feta cheese to the egg mixture and stir briefly
6. Pour into pie crust
7. Sprinkle parm evenly over the top
8. Bake at 375 for 25-30 mins - quiche is done when knife inserted in the center comes out clean.
Serves 6-8 (calorie info calculated for 8 servings)
To reduce the calories/fat even more:
- use reduced fat feta cheese
- Don't use parm at all
- Don't use a pie crust, just spray the pie dish with a nonstick cooking spray.

*****Update*****
Made this recipe again last night and I made some slight changes/improvements that others might enjoy:
-Pre-baked the crust for ~7-10 mins at 375
-As suggested by some I added a little salt/pepper to egg mixture
-Sauteed scallions with the mushrooms
-Added ~1 c. of imitation crab/lobster meat chopped into relatively small pieces
These alterations did a lot to improve the texture of the crust and overall flavor of the quiche only increased the calories by 15-20 cals / slice

1 1/2 cups shredded cheddar cheese
2 tablespoons flour
1 cup milk
3 eggs, slightly beaten
1/2 cup grated parmesan cheese (optional)
9 inches unbaked pie shells
1 dash pepper
Directions
1Toss cheddar cheese with flour.
2Add milk, eggs, and parmesan cheese (if using), and pepper; mix well.
3Pour into unbaked pie shell.
4Bake at 350* for 50-60 minutes or until set.
5Variations: Add 10 oz. pkg frozen chopped broccoli, cooked and drained and 4 oz. can sliced mushrooms, drained.
6Add 1 cup finely chopped ham, 1/4 cup finely chopped green pepper, and 1/4 cup chopped pimentos.
7Add 8 slices bacon, crisply cooked and crumbled and 1/4 cup chopped green onions.
8Substitute 1 1/2 cup Mozzarella cheese for the cheddar cheese.
9Add a 4 oz, pkg. sliced pepperoni, 4 oz. can sliced mushrooms, drained and 1/4 teaspoon oregano leaves, crushed.
10Top with thin tomato slices just before serving.
11Add 1/2 lb. bulk pork sausage cooked and drained; 10 oz. pkg. frozen chopped spinach, cooked and well drained; 1/4 cup chopped onion and a dash of garlic powder.
