Peppercorn sauce recipe?!
Answers: can anyone tell me an easy recipe?
here is an easy recipe i have learned for pepper corn sauce:
make up some gravy using granuales,whisk,add 1 stock cube,chicken or beef whatever you prefer add some fresh pouring cream about 6 tablespoons and add some black crushed peppercorns,whisk all together and add cornflour to thicken,enjoy....x
tastes lovely with steak or chicken hun.x
melt a knob of butter in a pan
add finley minced onions, shallots & garlic and brown
add a couple of spoons full of lightly crushed FRESH GREEN PEPPERCORNS you can get these in jars at the supermarket (you can press them lightly between two spoons to crush) fry these briefly.
flambee the pan with a splash of brandy (optional)
throw in a tub of thick cream (double cream).
Stir & taste- add a little crumbled chicken stock cube if it's bland
stir well, bring to boil and cook until it reduces to the desired thickness - add water if it gets too thick.
Rainbow Peppercorn Sauce
Ingredients:
6 tsp. Fresh cracked black peppercorns
3 Tbsp. dried green peppercorns soaked in 1/4 wine
3/4 cup heavy cream
2 cups white wine (dry)
2 Tbsp. butter
Preparation with meat drippings:
If the sauce is intended for meat such as steaks, marinade by pressing a few cracked black peppercorns into them and coating in olive oil. Let stand for several hours.
If meat is cooked in a pan, deglaze the pan when cooking is completed and meat has been removed, with 1 cup of the wine and reduce to half over medium heat. See peppercorn sauce continued.
Preparation without meat drippings:
Add butter to a sauce pan and let lightly brown, deglaze with1 cup of the wine and reduce to half over medium heat..

Add remaining cracked black peppercorns, green peppercorns, and 3/4 cup cream to sauce pan. Continue cooking while constantly stirring until sauce is reduced by half. You should now have about 3/4 of a cup peppercorn sauce which can be added to all kinds of food.

Pink Peppercorn Sauce
2 1/2 teaspoons butter
1 teaspoon crushed pink peppercorns
1 teaspoon finely chopped pimentos
1 teaspoon finely chopped sun-dried tomatoes
4 ounce heavy cream
Melt butter in sauce pan, add peppercorns, pimentos,
and sun-dried tomatoes, and cook a couple of minutes stirring continuously. Slowly stir in heavy cream and reduce to desired thickness. Serve warm
Sirloin Steak with Cracked Peppercorn Sauce Recipe
For this recipe, you will need, per person:
1 large sirloin steak
2 or 3 chestnut mushrooms (halved downwards through the stalk)
Sunflower oil for frying
2 large potatoes (peeled and chunked)
1/2 tsp of dried thyme
Salt
2 cloves of garlic
1 tbsp of olive or sunflower oil
2 tbsp of double cream (not single cream - it will split)
1/2 tsp of whole black peppercorns (cracked in a pestle and mortar)
1 clove of garlic (crushed)
1/2 small broccoli head (split in to florets)
Remember to open your wine and allow it to "breathe!" Put your oven on to preheat to 200 degrees centigrade or equivalent with a baking sheet inside. Parboil your potatoes for 8 to 10 minutes then drain well. In a large bowl, put your olive oil, thyme and salt and carefully stir the potatoes around until well coated. Put them on the baking sheet in the oven for twenty minutes. In the same bowl (unwashed) put your two cloves of crushed garlic and after 20 minutes, again stir the potatoes through the residue and put them back in the oven for another 10 minutes. Put your broccoli in to a large pan of boiling, salted water. Put your sunflower oil in to a frying pan and get it up to a high heat. Season your steak with pepper only and fry for 2 to 3 minutes at the most on each side along with the mushroom halves. Remove the pan from the heat and set aside for the meat to rest while you make your sauce. Put the cream in a small saucepan and gently heat. Add the pepper and the crushed garlic, stirring well with a wooden spoon. After a few minutes your sauce should start to thicken. You can now drain your broccoli and plate up.
Put two ounces of butter and two tablespoons of flour into a saucepan and stir for five minutes. Pour 1 1/2 pints of boiling milk in gradually, beating well with a whisk. Add some nutmeg, a pinch of salt, and a few peppercorns (approx 40 - depends how peppery you want it).
