Need Easter Menu....!?!


Question: My two best girlfriends are coming over for Easter 'linner' and I have no idea what to make. I am lactose intolerant, so cheese, milk, etc are out. One girlfriend is allergic to sugar and is gluten free. The third is vegan (thoug does not mind if there's a sprinkle of cheese on her salad--she doesn't flip out or anything). Their kids and my family are getting together (well, we are ALL family) and I would like something easy to make. Was thinking getting prestuffed chicken breasts from Sprouts and a masala burger for my vegan friend, but what else???? HELP! We're also thinking of potlucking it, but just to be safe....

You should see us when we attempt to go out to dinner! LMAO! Ironically Red Robin works best--veggie burgers for all!

I would potluck and have everyone bring their favorite dish, this way everyone's happy and you get to try new things.

Wow, that the most insane thig i have ever heard of. Im sorry but i think red ron=bin is your best bet and they do have the best veggie burgers!

Serve a bowl of dyed eggs and a rabbit. Best meal ever. There is no sugar, dairy and it's a good chance to tell your vegan friend to get over it with a big heaping serving of bunny! Plus at this time of year there are rabbits for sale all over the place. Just don't tell them that you're planning on eating the bunny. Make up something like it's an irresponsible gift for your nephew.
Just kidding, but seriously vegans are the worst. You must have the patience of a saint to put up with that. It sounds like you have your hands full. Make a salad for the bunny hugger and sandwiches for everyone else. Simplest thing. Or veggie burgers. Or spaghetti. Sounds like no matter what you do it's going to be a casual meal since none of your friends can eat normal food. You might want to consider going to out to a restaurant that way everyone can order whatever insane thing it is they want.

I reecntly found some wheat and glutton free pasta that is made with corn. I found spagetti and other noodles that would be good for a pasta salad. It is a bright and vibrant pasta perfect for a nice sping meal. You could do that with a bit of olive oil and then add some garlic, parsley, parmesean or feta etc... cheese (at the table for an option for those of you who can/want to have it) You could also add some red and yellow bell pepper strips-roasted or just thinly sliced. And also sun dreid tomatoes would be good. as well. Stuffed chicken breats would go well with this pasta. I've also seen rice pasta that is wheat and glutten free.

She can't be vegan if she doesn't mind cheese... at least not a true vegan.

Crisp Potato Skins - Serves 4, adjust for the correct number

4 medium russet potatoes
.25 cup of extra-virgin olive oil
salt and pepper, to taste

adjust oven racks to highest and middle positions. preheat oven to 450. pierce each potato 8 times with a fork. place directly on the middle rack and bake until tender (about 40 mins). let stand until cool (about 5 mins)

cut each potato in half lengthwise and use a small spoon to scoop out the insides leaving about .25 shell all around.

slice each potato shell in half lengthwise again to make 16 wedges and place on baking sheet.

combine oil, salt, and pepper in a small bowl. brush on all sides of potato wedges. bake on highest rack until crisp (about 20 mins). season with salt.

How about a confetti pasta salad, made with gluten free pasta? It's very delcious and healthy and everyone should be able to eat it as it contains no meat or dairy products, sugar or gluten that I can see.

1 cup mayonnaise
1 tablespoon red wine vinegar
1 teaspoon salt
1/4 teaspoon ground black pepper
1 clove garlic, minced
1 1/2 tablespoons chopped fresh basil
2 cups gluten free pasta
1 cup chopped tomatoes
1/2 cup chopped yellow bell pepper
1/2 cup sliced black olives

Cook pasta according to package directions. Rinse in cold water, and drain.
In a large mixing bowl, whisk together mayonnaise, vinegar, salt, black pepper, and garlic until well blended. Mix in basil. Add pasta, tomatoes, bell peppers, and olives; fold gently until mixed. Chill several hours. Stir gently before serving.

Sometimes I add a some thinly sliced radishes and/or diced cucumbers to this to give it a nice crunch.
