How do you make a vannila pannacotta with a blue berry compot?!


Question: 250ml double cream
250ml full fat milk
1 vanilla pod
60g caster sugar
3 gelatin leaves

150g blueberries
40g sugar
4 tablespoons water

Place the gelatin leaves in a bowl of cold water to soften
Scrape the vanilla pod into a pan with the milk, sugar and cream and bring just to the brink of boiling on a gentle heat. Remove from the heat and allow to cool for ten minutes.
Pick the gelatin out of the cold water with your hand and squeeze out any excess water is if it were a sponge then add the gelatin to the cooked cream mixture. Stir to dissolve and pour into moulds or wine glasses to set for at least 5 hours but overnight is best.

For the compote place the berries, sugar and water in a pan and heat gently to soften everything and start rendering the juices out of the blueberries. Check the sweetness and add a little more sugar if necessary.

Serve!

To vary you could add spices such as cinnamon, star anise and the discarded vanilla pod to the compote for a spiced compote flavour.
