This is how I cook my bok choy and my husband loves it:

In a hot pan, add oil and minced garlic. Stir the garlic for a minute or so, then add bok choy (each leaf is separated). Toss the bok choy with the garlic, then add a little salt and granulated chicken boullion. Cook the bok choy until it's cooked (when the leaves stem part starts to get soft). After it's cooked, transfer everything on a plate. To make the sauce, you'll need to heat up a little water, fish sauce and oyster sauce in a pan. Stir the ingredients together until you see a boil. After it boils, add tapioca powder and water. This acts like a thickener. After the sauce thickens, pour the sauce over the bok choy. Enjoy!

Go to rachel ray's website and make the soba bowl soup. It's delicious.

I just slice a teensy bit off the bulb end, and lay them in a pyrex pan, with about 1/4" of water in it.... cover with waxed paper, and microwave about 3-4 min. Then put butter and salt on them.....

Yeah, make a stir fry.

Stir fry is the way to go. Slice them up any which way keeping the pieces quite chunky and throw into a smoking hot wok with some vegetable oil. 3 minutes cooking is enough and the pieces at the base should retain their crunchy refreshing edge. I like it just tossed with finely diced chilli, garlic and a little rice wine vinegar.

Try the link I provided. I do like beef with it.

I know why you bought it !!! Its because it looks good!...Well you can cook it more ways than the same flavor ingredient we're used to....cabbage. Its a relative...same flavor components BUT fresher! Thats why you bought it....so keep it fresh, just steam it and seve it next to chops...

Stir-fry? It is the major ingredient! Add shredded carrots, thin sliced onions, celery, sprouts and a bit of parsley, garlic, sesame oil and soy....Serve on rice....(add p-nut butter 2T.& pepper flakes 1/2 tsp. ) for a Thai take o this...Real chopped Peanuts and thinly chopped green onion on top will make it look proffessional1

Yep, stir-fry - little olive oil, soy sauce, hot pepper sesame oil and hmm, mushrooms, broccoli and whatever else you like.
