Substitutions??!
Answers: If I have no access to coconuts...well really I don't want to mess with one...how can I make a "mock" coconut water (which is the juice found inside a coconut)? but, my aunt makes awesome coconut cake all the time, and she doesn't use any of that 'coconut cream..milk" etc. she makes a white (not yellow, white) cake from scratch, adds a little of the shredded coconut to the batter, and then basically makes a butter cream or vanilla frosting and presses the coconut all around it. it looks pretty and tastes awesome. it's like, her signature cake :)
If you were making the recipe from fresh coconut you would have the water - but if you aren't (or it is headed for the sea - opening the beasties can be troublesome) then just use water. You could add a little coconut extract if you have it but I don't think it is necessary.
Well, both coconut water AND coconut milk are sold in cans at various ethnic markets.
If you have the other coconut ingredients, then I would just use regular water. If you want you could try mixing in a little of the coconut milk, just to add that bit more flavour.

To make a substitute for coconut water. Put some dried, unsweetened coconut in 8 ounces of water and simmer for a few minutes. Drain off the water. It does not say how much coconut to use.
I would replace that with milk and coconut extract.
