Breakfast/ Brunch Casseroles?!
Answers: I know there are plenty of egg casseroles out there for breakfast, but I don't have any recipes. Do you have one you would like to share? Thanks!

CHILI RELLENO EGG CASSEROLE
6 slices white bread, cubed
2 c. cheddar cheese, grated
8 eggs, slightly beaten
4 c. milk
1 4-oz. can mild chili peppers, diced
1 tsp. salt
1/4 tsp. pepper
1/2 c. chopped onion
Place bread in greased 9x13" pan. Sprinkle cheese over bread. Beat eggs with rest of ingredients and pour over bread & cheese. Bake at 325 for 45 min. ... serves 10
I really like this recipe from allrecipes.
I usually cook bacon and add it instead of the sausage, and, it's nice because you can assemble it the night before and pop it in the oven in the morning. It's especially good for holiday mornings, where you might be busy anyway.
My girlfriend sent me this recipe:
Frittat
DZ Eggs
1 lb of sausage (uncased, sweet or hot)
1 pk mozzarella cheese
1 pt ricotta cheese
In a skillet cook your sausage. In a large bowl mix remaining ingredients well. In a Pyrex baking dish place cooked sausage on the bottom, pour egg mixture over the top. Cover with aluminum foil, bake for about 35 minutes, remove foil and bake until top browns slightly. You can put chopped veggies in this too, but traditionally it is made without them.
Which ever you prefer.
