Condensed milk, also known as sweetened condensed milk, is cow's milk from which water has been removed and to which sugar has been added, yielding a very thick, sweet product that can last for years without refrigeration if unopened. The two terms, condensed milk and sweetened condensed milk, have become synonymous; though there have been unsweetened condensed milk products, today these are uncommon. Condensed milk is used in numerous dessert dishes in many countries.

A related product is evaporated milk, which has undergone a more complex process and which is not sweetened.

Evaporated milk is a shelf-stable canned milk product with about 60% of the water removed from fresh milk. It can be sweetened or not sweetened.[citation needed] It differs from condensed milk which contains sugar. Condensed milk requires less processing because the added sugar inhibits bacterial growth.

Evaporated milk was popular before refrigeration as a substitute for perishable fresh milk, because it could be reconstituted by adding water. In present times, household use is most often for desserts and baking. When mixed with an equal amount of water, it can be substituted for fresh milk in recipes.

Evaporated milk will last for weeks, months, and sometimes years on the shelf depending on the brand.

NOPE one is thick and sweet and one is thin and milky

no

The difference between condensed and evaporated comes in to play when you have sweetened condensed milk, which cannot be substituted for evaporated milk. Sweetened condensed milk contains a very large amount of sugar. In fact, at least 40% of what is inside a can of sweetened condensed milk is sugar. It is therefore very sweet, in addition to being shelf-stable. Sweetened condensed milk, in addition to being used in baking and candy-making, is a popular addition to drinks like Vietnamese coffee and Thai iced tea. Its most popular use at the moment is for making dulce de leche, which is a heavily caramelized version of sweetened condensed milk. Again, it is shelf stable, so rather than wondering about substitutes, it is best to pick up a can and stick it in the back of the cupboard in case it is needed.
