Is there any way to make good cookies without baking soda, chocalate chips, shortening, or brown sugar?!
Answers: I have white sugar, but not brown.
1 cup white sugar
1/2 cup peanut butter
1 egg
mix well-take a tsp size amt and form into a round ball-press down w/fork(crisscross shape)
place balls on cookie sheet and bake approx 10 minutes on 325-let cool completely-enjoy!
Could you use baking powder?

Sure, if you have butter or margarine. You can make sugar cookies.
You can make macaroons with a large bag of coconut and a can of sweetened condensed milk. Just add a teaspoon of vanilla and drop onto a greased cookie sheet. Bake at 350 degrees until they start to turn brown. CAREFULLY remove from cookie sheet while they are still warm. If some of them come apart, you can smush them back together and they will stay.
While there is no substitute for baking soda (I've checked every cookbook I own), you can substitute butter for shortening measure for measure. That means 1 tablespoon of shortening = 1 tablespoon of butter. Use real butter for baking and not margarine or spreads. You'll get a better flavor and texture. Even if you don't use real butter for your everyday cooking, using it for baking only gives better results.
It seems baking soda is used in most cookie recipes but you can make sugar cookies. It calls for baking powder. Or, if you like shortbread cookies, here's a recipe I found in the JOY OF COOKING cookbook.
Scotch Shortbread
Preheat oven to 325 degrees.
Cream 1 cup butter.
Sift together 2 cups all-purpose flour
1/2 cup powdered (aka confectioner's) sugar
1/4 teaspoon salt
Blend the dry ingredients into the butter. Pat the stiff dough into an ungreased 9x9-inch pan and press edges down. Pierce with a fork through the dough every half-inch. Bake 25-30 minutes. Cut into squares while warm. Makes about 20 squares.
