I am makeing my own meatloaf?!
Answers: im a makeing a meatloaf i need ideas of what else I can add below is what ive got so far also any ideas to do with potatoes something different besides mashed or fried or baked would help to in my meatloaf I have ground beef,stove top stuffing, two eggs, seasoning, and onion anything else i could add that i may already have on hand
Let's see, first, with the meatloaf. I always get that pre-cooked bacon (or cook some, just not to crisp) and wrap that around my meatloaf. I mix cajun sausage with my ground beef too. As far as "sauce" I mix about 1/2 cup ketchup, 1 - 2 tbsp cider vinegar or regular, 1 tbsp brown sugar and about 1 tablespoon worchestire (sorry about the spelling). Bell peppers are always a good add too.
Now for your potatoes, recently I just took some and cut them up in chunks, boiled them about 10 minutes until fork tender, then drained. I stirred in some ranch dressing, green onions, and bacon (that I had leftover from the meatloaf). I spread it out on a cookie sheet, then topped with cheddar cheese. I put in the oven about 350 degrees, just until the cheese was melted. It was a hit in my house. I hope this helps you!
I use a Weight Watcher's meatloaf recipe for mini loaves that my family always enjoys. It has dijon mustard in it and also a small squirt of ketchup for moisture. Something I always add into meatloaf that is a little unexpected is thyme....just a little goes a long way and adds a nice flavor. Cook your onions before adding them for a sweeter onion flavor. I also add brown sugar.
How about making oven-roasted potatoes? Cut them into bite-size chunks, mix with chopped onions & garlic (if you have it), mix w/ seasonings and olive oil.
I wouldn't recommend using the stove top stuffing in your meatloaf... I've tried that before and it turns out dry - maybe you could use just 1/2 the mix, if you don't have regular breadcrumbs.
How about some ketchup and sliced green peppers? I always put them in my meatloaf
Bell peppers, crackers, ketchup. Try scalloped potatoes.
Ketchup. Both a little in the meatloaf, and on top. Also, I like throwing in a little bell pepper along with the onion.
I love meatloaf. By the way, in mine, I like to use oatmeal instead of stuffing mix. I guarantee you, it makes for the moistest, most delicious meatloaf ever. I also use some Jimmy Dean sausage, and that makes it out of this world.

I have always thought that the simpler the better when it comes to meatloaf.
I don't add seasoning packets or flavored stuffing.
I use plain dry breadcrumbs, eggs, milk, thyme, cumin, ketchup, minced fresh onion, and worcestershire sauce.
I also add about 1 teaspoon of yellow mustard, and really don't add any salt, because worcestershire sauce is soooo salty.
I put ketchup on top of the meatloaf, and sometimes lay a few strips of bacon on top.
I always serve mashed potatoes with meatloaf. I like to stir in cooked chopped spinach, cheddar cheese, and sour cream into the potatoes.
If you are looking for different ideas for meatloaf additions, I really LOVE the recipe that uses lipton onion soup mix and OATMEAL in the meatloaf. You'd be surprised how delicious it is. Nobody guesses the oatmeal part, either.

i ushualy use salsa and a little bread ripped in to peaces yhis keeps the meatloaf moist and good and on the top put bacon strips for extra goodness

I found a highly rated variation on Allrecipes.com that called for Some Ginger, Brown Sugar, Ketcuhp and Onions. It was amazing.
i usually put these in my meat loaf...egg, lipton onion soup mix, worchtesier sauce, and just a little bread crumbs. for your potatos, try oven roasted with onions and babycarrots
I add mozzarella cheese to the inside of the meatloaf, so that every piece has the cheese in the center. You can add also: garlic powder, lemon juice, grated cheese, onion powder to the meatloaf mix. When I cook it, I always cook with onions on and next to the meat for extra flavor.
For the potatoes, I cut them into fourths and bake them in the oven, covered in mushroom soup (1 can) and I add tarragon to add a different kind of taste. They come out tender and taste different than the usual. My husband loves them.
