Answers: The recipe I have says not to use metal bowls, spoons, baking pans, etc. Why??

Chemical reactions between the metal and the acids in the sour dough. The best is to use wooden spoons and glass containers.

the acid in the dough reacts with metal.

The metal kills the yeast and or neutralizes the acid it feeds on.
