beehive peaches

4 peaches
pie crust for 2 pies
1 stick butter
1 egg
2 cup powdered sugar
1tsp Almond extract
Nutmeg

clean and dry peaches and set aside
Lay out pie crust and slice into 1 inch strips
Wrap each peach with strips of pie crust. from bottom up..to resemble a bee hive...bake for 40 mins at 375
While the peaches or cooking combine melted butter ,egg, sugar,almond extract and nutmeg to taste.
When peaches are done remove each to a small bowl...pour sauce over each peach and serve.

Parmesan Meat Loaf

1.5 lbs ground extra lean ground beef
5 oz grated parmesan cheese
1/2 cup eggbeaters OR two eggs
2 Tbsp parsley
1/2 tsp black pepper
1 clove garlic, chopped
1 chopped onion

Mix together. Form into loaf. Bake 375 degrees 30-45 minutes

Curried Chicken.
Ingredients:
4 chicken breast fillets, diced
2 onions, chopped
1 garlic clove, crushed
3 tablespoons cooking oil
1/2 ounce medium curry powder (more if you prefer it hotter)
14 ounces can evaporated milk
salt and freshly ground black pepper.

Cook the chopped onions and garlic in the oil for a few minutes, allowing them to colour slightly. Add the curry powder and continue to cook for a few minutes. Season the diced chicken breast with salt and pepper and add to the curried onions. Turn in the pan until completely sealed on all sides. Add the evaporated milk and bring to a simmer. Cook for 15 to 20 minutes, stirring occasionally to prevent it from sticking. Check for seasoning and your curry is ready. To lift the finished dish, sprinkle with some chopped fresh coriander.

here's one my family loves.
crock pot chicken cacciatore..
1) 2 pds of boneless,skinless chicken
2)1 large onion,i use the yellow kind,thinely sliced
3)1 green bell pepper,thinely cut up
4)2 cups of chicken broth
5) 1 6oz can of tomato paste
1 small can of sliced mushrooms
14.5oz diced tomaotes
1 8oz can of tomatoe sauce
1tbsp dried parsely
1tsp oregano
1/2 tsp ground cumin
1/2 tsp basil
1/2 tsp pepper
1/2 tsp salt
parmesan cheese

Some of my favorites:

Lemon Chicken (it's actually Katie Couric's recipe, I read it in a magazine!)

Ingredients:

Chicken breasts (thin are better)
Lemons
Chicken broth
Flour
Olive oil (or vegetable)
Butter

Steps:

1. Put 2 tbsp. butter (not margarine!) and 2 tbsp. olive oil in a pan. Heat until butter is melted and oil is hot.

2. Rinse chicken breasts and coat with flour.

3. Take coated chicken breasts and cook in oil/butter mixture until golden (about 6 minutes on each side)

4. Once all chicken is done cooking place in a preheated over to keep warm while you make lemon butter sauce.

5. With leftover oil/butter in the pan, add 1 tbsp flour, 3/4 cup chicken broth and juice of one lemon. Whisk all together. (You can add more flour to thicken or more lemon if you prefer).

6. Spoon over chicken breasts!

That dish is really good w/ fresh steamed brocolli and buttered garlic noodles.

I also love this recipe! Lots of ingredients but super easy!

Twice baked potatoes:

Potatoes
Cheddar cheese
Garlic
Chopped onion
Salt
Pepper
Sour Cream

1. Wash, then bake desired number of potatoes in 400degree oven

2. Once they are fully cooked, remove, and cut them in half lengthwise.

3. Scoop out potato "insides" in a large mixing bowl, leaving only the skins.

4. Add 1 small container sour cream, 8 oz cheddar cheese and remaining ingredients to taste.

5. Place mixture back in potato skins. Top with cheddar cheese.

6. Place potatoes back in oven to rehaeat.

So yummy! You can also change it up by adding bacon, chives, etc to the mixture.
